Warm Weather Shiitake Strains and Fruit Quality

I can get shiitake from Kitchen Pride mushrooms here in East Texas from pretty much every grocery store, they run about $14 a pound, sometimes less when they're on foam card packages and start to turn.  Over the years the shiitake quality has gone down steadily, especially during warmer months, so I'm assuming they are running with a warm weather strain to reduce energy requirements?  The caps are small and thinly fleshed, while in winter months they might have some higher quality fruits with substantial caps and intact veils and such...

GGMM mentions a rapid (14 days to fruit) growing strain he has obtained from China, and that the fruit quality is as I've described.. small, thin caps.  But then he states that better quality fruits are obtained if the blocks are given additional resting time before fruiting is initiated.

So could it be the same strain, from a successive fruiting?  Could they be using different strains in the winter?  I'm curious if anyone has worked with warm weather strains and gotten good quality fruits from them.

I was looking at a story about someone using a refrigerated trailer as a fruiting container and there was a link to Lambert, apparently they sell shiitake blocks to growers ready to fruit:  http://www.lambertspawn.com/product_shiitake_logs.html

I assume that's what the bigger operations use, as opposed to producing their own supplemented sawdust blocks.
