Meripilus sumstinei - How to cook

I found a couple Meripilus Sumstinei growing in my backyard, and I want to try to eat them.  I have a field guide that says they are better to eat when young, but I'm fairly new at mushroom hunting, and I'm not sure how young I should harvest them.



AKA: Black Staining Polypore, Rooster of the Woods

Anyone have any experience preparing these to eat?  I'm freezing the first one I harvested to try deep frying it. unless anyone else has a better idea of what to do with it.

I don't care for them too much. They are fairly bland and look very unappealing after they're cooked. With that said I have eaten one before. I sliced it into 1/2" thick steaks. Put a little olive oil, Worcestershire, salt, pepper and garlic and threw it on the grill for about 5 minutes per side. This is also a way I often prepare Maitake.

Yeah. they suck, really only good to bulk up a dish, they absorb flavors well though, so can work like tofu.
