Best time to birth if leaving unattended

This is my first time growing and my cakes have been colonized almost a week with some pinning happening in the jars (read that it was helpful to let them sit anywhere from 2-3 days to a week after colonizing) so they are ready to birth. I just learned I have to leave town in a week from today for a 5-day trip. With that said, trying to determine when would be the best time to birth these (was planning to dunk and roll). Seeing that they are beginning to pin I feel I need to birth them sooner than later so would it make more sense to 1. birth them now so I have a close eye on the beginning stages of fruiting (picking aborts and whatnot) and have someone pick them for me while I'mm gone, 2. waiting until right before I leave and have someone look in on them every few days (will have perlite set up with hepa air filtration on timer twice a day) that way I can tend to them personally 5/6 days in, or 3. can these cakes sit another 10-12 days in the jars and do it when I get back (having been colonized for over 2 1/2 weeks and pinning for about 10 days)?

Tough call. I'd probably just wait til you get back to birth them. Pick the mature mushrooms when you birth if they look ready, and then dunk and roll as usual. Pins can get dunked and rolled no problems.

Thanks for the input! Not sure if this matters but many of the jars have water droplets in them! Have so since fully colonized. I've read a bunch of threads previous to my post in hopes of finding an answer to my specifics and I saw others mention water droplets are normal but nothing about whether it would be fine to leave them in the jars for an additional 2 weeks or longer with condensation forming (contamination problems?). I get this is normal when there is a temp difference and the mycelium produces heat, which is probably warmer than my 79-80 degree set up (TiT), just not sure if this is a condition that remains "normal" for weeks. That is, without having the proper air flow like in a FC.

Well they should be sterile under the dry verm layer, so the worst thing you should see is soggy aborted fruits when you get back. Dunk and roll, and you'll have healthy fruits

Having them in the open air of a chamber, exposed to all the environmental contams, with nobody there to take care of them is imo gonna be much worse. Also uh you don't need a TiT. They grow just as fast in the low 70s, with much less chance of bacteria and what not thriving.

So I checked on my jars today and half the jars have anywhere from an inch to two inch long pins now (have two diff strains). Cool to leave those for over another week or have they gotten to big to leave in jar? Or birth those that have gotten big and wait til I get back to do the others? They are jammed up against the side of the jar as there is no width but they are growing up as well as around. I leave Friday and come back Tuesday and I have someone to look in on them so if I need to I can birth! Thoughts?

Yeah. They're going to get big and abort. You can pick and eat the big ones when you get back. Dunk and roll it and leave the growing pins intact  when you dunk and roll
