Rate my Shiitake?

Just started fruiting a new strain so I'm not sure if I've got the conditions right. Currently running close to 90% RH @ 70F any suggestions on improving yield or quality welcome

that looks great, i usually pick mine before the cap flattens out- when the cap edges are curved down still.

It's a proprietary strain from a farm in Ontario, I bought the 7lb blocks to see if there's a market before jumping in.
Just harvested 10lb this morning from 6 blocks, for a total of 14lb first flush from them! Plus another 1.5lb still growing
Is there a major difference in rounded cap vs flat cap as far as storage and flavour go? Or is it simply to reduce the spore load?

i dunno I pick them like in the pics you posted. more weight IMO

I used to be a bit lazy on picking my shiitake and sometimes would let them go till the caps opened up like that. But then one day at market an Asian lady asked me whats the deal, and why all the caps weren't cupped anymore...
I had no good excuse besides that I let them go to long. Ever since then I've always made an extra effort to pick them before they unfurl. Its hard to look like you know what your doing when all your mushrooms are over mature. Hence, the Asian lady calling me out.
IMO they aren't really gaining any weight by letting them unfurl, and they're actually probably losing weight from releasing zillions of spores. Flavor, quality, shelf life, etc. are all affected by letting them open.
Lots of times I'll only partially harvest a flush if they aren't all primo-ready to be picked, and leave the others growing to come back and pick later rather then let some over mature while waiting for them all to be done...
