I favor Tex-Mex and various cultures' versions of chili, like vindaloo or goulash. But my pride and joy are American chills no matter the variety. I especially like Texas and Cincinnati chili.
Anything old world, that can be cooked in cauldrons over a fire are also close to my heart.

Anything spicy. I've had fun making palak paneer, an Indian dish with homemade cheese and pureed spinach. I'd like to make other Indian dishes such as tikka masala. I love that stuff.

The only type of food that I enjoy cooking more than any other is BBQ/smoked stuff. I do cooking from all over the place though. When it comes to home cooking I prefer Mexican food, like real Mexican, not the American version. I tend to throw my own little spin on even traditional dishes though. I'll add in something that isn't really used but I think suits it well and caters more to my own personal tastes.
I also have my own style that I've developed over years by taking a little part of this recipe and a little part of that one. I often mix and match many little pieces of various recipes I've done over the years just by what feels right. I do most of my cooking without a recipe and just from my head. If I really nail something and love it (or my wife does) I'll write it down so I can repeat it later, but more often than not, I'm just flying blind and going by instinct or whim.

There are only two things I can cook well:
1. Jerk Chicken
2. Blue steak
Unsurprisingly, they are my two favourite foods ever, and I've spent years of trial and error mastering prepping and cooking them. Oh, and I'm always drinking a beer when making them.
However, I simply do not have the patience for cooking. Give me something (anything, preferably mechanical) broken to fix and I'll try and fix it and be very happy about doing so. But cooking? There's few things I'd rather do.

Like, to the point where your pan is warping and the smoke alarm is going off cause of the smoke pouring from the pan even though there's nothing in it. You have to make it the hottest thing you can possibly imagine.
Seriously. If those two things are not happening, you're doing it wrong.
Oh, and fuck butter, it burns at waaaaaayyy too low a temperature. You need something with a high burn point like rice bran oil. Paint the steak, not the pan.

Because it's fucking amazing. It's not always cold in the middle, depends on the skill of the chef. A master will deliver it warm all the way through, but very definitely 90% raw.

I cook on the barbeque, and cook a mean stew. Baking goes as far as lemon squares and brownies from scratch. I like good food but I couldn't give less a shit about putting any extra effort in to having it. The wife can cover that mess. 
Though I did make a lasagna for her bday once, she still bugs me about making it again.

So many delicious responses in this thread! 
I enjoy cooking breakfast foods. I make the world's most badass omelette. Love loading an omelette with hash browns, all sorts of meats and bell peppers, etc
I love cooking chicken dishes. Especially Indian cuisine. Like butter chicken and curry's and such.
And I cook with ground hamburger a lot. Chili's, spaghetti sauces (I use spaghetti squash instead of pasta tho) and that sort of thing. I make a mean eggplant lasagna (no pasta and no one can tell). Stir frys are commonly cooked by me too
And I love to use my bbq for steak and potatoes.
My quick 2 go meal is 3 eggs, over easy, and 2 pieces of toast.

anything that can be done on the grill. we got one earlier this year and use it 3 or 4 times a week. amazing cooking vessel!
I cooked pizza on it tonight. Usually will go with carne asade, hamburgers, or kabobs.

I'm pretty lazy when it comes to preparation. I like to see what ingredients I have and try to whip something up in 10 minutes. In the morning I usually have sauteed/steamed veggies (kale/spinach, peppers, mushrooms, etc) and a fried egg or two with some cheese, and sometimes fry some rice from the night before to break the yolk into.
I want to learn how to bake well nd shit but my oven dont work. I like cooking meat.
I'm craving quiche right now but there's no way in hell I'm spending the time to do that.

Cuisines I cook most often:
Italian, Mexican, Japanese, Korean, Chinese. And of course standard American fare like steak, BBQ ribs, etc.
I would like to master more French eventually, they are the masters of creme sauces, and cooking Michelin-star level cuisine French is the most difficult of all to master, I believe.

I love tartare. You should try Korean style tartare, it's called yukkhoe. Carpaccio is my favorite style of steak tartare, and yukkhoe is my second favorite style of tartare.

I need to cook more Indian food, I love the stuff, so far I've only ever cooked Indian curry once though. My boyfriend cooks up a tikka masala that I enjoy a lot.
There are a few dishes that I absolutely refuse to cook, and that is:
-Pho. It takes at least 4 hours to make, and up to 2-3 days for the perfect, delectable bowl of pho. The effort isn't worth it to me, considering I can get a bowl of pho for under $10.
-Burgers of any kind. As long as In-N-Out is selling $2 burgers, I see no point in spending more money to make my own burgers at home. It's not cost-effective, and I have to deal with cleaning up the mess.

Uncultured swine... jk... seriously though, don't knock it till you've tried it. I prefer raw beef carpaccio or tartare over a cooked steak.
Also, rare steak is excellent, but only if it's filet mignon or a low fat cut of meat. With fatter cuts, the fat comes out too chewy unless it's at least medium rare or above. You want fat to be crispy, not chewy and slimey.

Gross. I ordered prime rib rare at a famous steakhouse in NY (peter lugers), and I regretted my decision. The beef was way too chewy, I had to chew and chew and chew to get each bite down. Ended up taking half the steak home and grilling it a little more to enjoy the rest.

I've found over the years I can cook a better steak than any steakhouse I've been to. The source of the meat is obviously an issue, but when I got a good supplier I'll put a fuck ton more love into getting it *just* the way I like it...

What's your TEK?
I have a fool proof TEK for making my steaks medium rare without fail. Sear the outside on super high heat on the grill for a minute, then throw in the oven with butter and chopped garlic on top at 400F for 6 minutes.
Obviously this only works on steaks of a certain size and thickness (think a standard cut you would find at the grocer), very thick or ultra-large steaks require different temperature which I haven't prepared often enough to master.
But yeah, a good steak is really all about the quality of the meat more than anything else. There is nothing worse than shitty supermarket beef. You know the beef quality is utter shit when it tastes better completely nuked than medium rare.

1. Get your meat out of the fridge and let it sit for 20 mins 2. Get your pan hotter than the fires of hell. If it aint smoking and your fire alarm aint going off it aint hot enough 3. 5 Minutes before she goes in the pan, coat steak with sea salt, pepper, and rice bran oil. 4. Get a stopwatch and chuck that beauty in your red hot pan; 1 minute a side 5. When she comes out, wrap her in tinfoil and leave somewhere warm for 5 minutes minimum 6. Unwrap, eat the whole steak, each mouthful full of orgasmic bliss 7. Deal with potatoes/vegetables/whatever else once steak is finished
**I reckon your oven temp is too high on that stage. The meat needs cooler to fully 'relax' IMO.

I'm hungry now...
I am the type of person who likes to make everything from scratch. If I make Mexican, the beans and tortillas will be made by me that day along with the main dish, you know?
The older I get, the longer I like my steaks cooked. I used to like a blue steak, then rare, then medium rare... weird.

Interesting. Just wrapping it in foil and keeping it warm is enough to cook it? I'd imagine it would just remain seared on the outside and raw on the inside. How do you keep it heated in foil?

Well that stage aint to cook it at all; it's to let the fibres of the meant relax. Think of it like muscle that's been pumped and is tight from the heat. If you want it to be ultimately tender, you gotta give it time to relax again.
I usually rest it near the hob I was cooking on or in a cooling oven with the door open.
