Heya Peeps,
What is your best dish cooked in bulk; in particular, a healthy one?
I find that cooking one meal at a time can be very time-consuming. Example: take the time to cook an omelette in the morning, a salad for lunch, and roast chicken for dinner can easily eat up two hours that a working person doesn't have.
So, the solution is to cook in bulk: a week's worth of meals at a time, and fridge or freeze them.
My favorite would have to be a good, simple chili recipe. Mine is sort of a spicy play on beef with barley.
1. Sort, soak, and simmer red/black/white/chartreuse beans for about 1.5 hours. 2. Add some barley or slow-cooking Irish oats about 30 minutes before the beans are done. 2. In a separate pot, brown some ground beef/veal/pork/turkey/chicken/emu/possum/whatever 3. Add some finely chopped red pepper, onion, jalapeños, or whatever veggies. 4. Combine black bean pot of stuff into the beef-simmering pot (to basically deglaze all the browning flavor) and simmer for another 10 mins or so 5. Add your final spices: salt, pepper, paprika, etc.
Voilá! You've got a big ole' pot of delicious healthy food, ready to eat for the next week or two.

pasta sauce is really easy to split and freeze then just do the pasta of choice and thaw the sauce then heat.
i like to do burgers and other things as well, just portion them out and easy to throw on the grill or in the pan when you need some food.
i am eager to get my kitchen remodeled eventually and have a 2nd freezer/fridge or beverages and frozen goodies.

Chipotle chicken. One pot meal, get your onions going, add garlic, sliced carrots, deboned chicken thighs, sliced chipotle chilis, stock, tomato paste and/or fresh tomatoes, cumin, coriander, simmer on low for an hour or two (or use a crock pot) until chicken is falling apart and sauce has reduced to desired consistency and salt to taste. Remove chicken skin and bones (if your chicken cuts had that to begin with), shred it, mix it back in and you can package portions in freezer containers, or just serve on top of baked sweet potatoes topped with cheese and green onions, or in tacos/burritos, on top of rice, in a bowl with a slice of bread, etc. Beans work well in the mix as well, but they can get mushy if you cook 'em for too long.
