Auckland North Shore Subs?

New to the game and would appricate an ID on these.From pictures I have seen and information read these seem to be the goods, I'm just not sure about the colour of the spore print. Should it be more purple?

I find the colour in the spore print comes out better on aluminium foil and it helps to look at them from different angles with good lighting. It is subtle.
Your mushrooms certainly look like subs to me.

Not all of the stems were blueing when bruised but all had some form of blue around the edge of the caps. Do all sub stems bruise blue without fail?

Subs can bruise from blue to black, and bruising can take time to show up on mushrooms. In general, the older and drier they are the slower they'll blue. If they're sufficiently dry they won't bruise at all. On the other hand, you may just lack the experience needed to properly identify bruising. I can definitely see bluing on all of the stems in your picture -- if there are any unphotographed mushrooms that you're unsure about, feel free to post more pictures.

Thanks for the input, this is my first season so a lot of learning going on about variations in the same species.
