When should you NOT spray your trays?

People with trays in GH seem to soak overnight after each flush. A few others have mentioned that as long as the trays are sufficiently sprayed daily that they don't ever need to soak. If one wanted to try this method, are there any conditions when one shouldn't spray? Does the water droplets harm fruits, pins, myc assuming there's never stagnant water spots on the surface? I had trouble searching for a consensus on the forums. Thanks!

You shouldn't spray your trays while driving.

Don't mist 24 hours before harvest or you waterlog your fruits and extend drying times, as well as ruin the fresh/dry weight ratio. Nothing sadder than getting 50g dry out of 1000g fresh.

But if one has an excalibur dehydrator and only measures dry weight, then spraying habits should do no harm?

You could be using the core of the sun to dehydrate it and it would still take x% longer. Moisture is what causes them to oxidize and lose potency over time. More of that isn't something I consider acceptable but I'm not you so that's up to you I guess. I like the stored product to have the maximum potency locked in.
Furthermore, another good time not to mist, is for 48 hours after harvest. This is a little more important if you use a blade/shears to harvest. Under ideal circumstances the stumps left behind from harvesting by cutting will revert back to mycelium and can even go on to produce pins, themselves, and in this situation, won't rot. If they become waterlogged from overmisting, they cannot revert back to mycelium, and continue to exist on the surface as wet food, which mold quickly latches on to. Same for aborts.
So, if the question is "Is misting indiscriminately, so I don't have to go by anything in particular, detrimental to the grow and my results?", then the answer is yes. You should read the mycelium to know when it needs misting because misting all the time has a lot of consequences, more than just the ones I described.

Well there's no harm done but if it's time to pick them in 24 hours then I don't really see a reason you'd want to spray them.

Just pour a few ml of water down the side of the tray to let the mycelium drink without affecting the fruits.
