First farmers market tomorrow!

So I have my first market tomorrow! And got ok'd for any of the 5 weekly markets this organization puts on! I have most of my ducks in order except of one thing, how I should go about pricing? I am going down there with 12 lb's of just King Oysters.
I was thinking about selling them in 1/4 and 1/2 pounds. For being the only gourmet mushroom and being king oysters which are supposed to sell for a little more, what should I sell these at, is 6$ a 1/4 too much?

Anyways thanks for any tips guys, and any thing helpful.

Oh and by the way, I'm putting a thanks out to Gr0wer, you have been a ton of help in setting up my little farm!!!!!

Congrats! And another thanks to Gr0wer as he's helped me a bunch too. My first market is on Tuesday. I'm not in the most affluent area but there are some within an hour (Tampa area). I'm planning on going for $3 a 1/4 lb for oysters, which will allow me to charge more for kings and shiitake in the future. If I find that there's a big demand here, I'll keep my prices low locally and charge higher further away. My first market is within walking distance. I'm also not selling by weight starting out, although I will be weighing, because I would need NTEP scales and a permit and an inspection. I'll get there but I'm going to just sell by the bag.

Same here about the weighing, Im going to do that at home and sell by the bag as well. That is pretty cool we are both launching this week, I am in Tucson Arizona and our farmers market scene here is nuts, it's a really artsy town, even in mid summer people are out there, although we have them in the evenings in the summer, tomorrow mine is 5-8

$6 a 1/4 lb is more than fair, that's what i sell all my specialty low quantity mushrooms like shiitake, Lions Mane and abalone with no bulk discounts at all. Kings are primo oysters. Do you think you will sell out with everything at full price? If so leave it full price I wouldn't discount too much, maybe $11 for 1/2 and stop there. If you have extra by the end of the first few markets, at the next market do more bulk pricing. The way I look at it is, if sell to XX potential customers in a day id like them to walk away with the most mushrooms and the most money in my pocket and me run out of mushrooms just as the market ends, maybe have some left over for trades. Bulk pricing does just that for me since the supply is large now and my demand is fairly matched. However, wouldn't drop below $16-18 lb for kings retail, regular oysters i drop to $12 lb retail for a full lb, but i also grow 200 lbs a mo.

Just a bit on pricing math, not including initial equipment investment. So say your putting 5 hours a week into making 12 lbs per week. Then your selling them for 7 hours including the trip to and from, that's 12 hours labor per week total. So if you sell 12 lbs at $24 lb that's $288. Now subtract your consumable materials cost (substrate and bags) and energy cost, say $15 and your at $273. Divide $273 by 12 hours total labor and your making $22.75 an hour. Anywhere from $20-30 is a fair deal IMO, cultivating mushrooms is a skilled trade.

So the market was alright, not a very a big turn out at all, I sold two pounds of King Oysters (8 1/4 lb. bags). I am signed up for the Saturday Market which is supposed to be huge, and also they said they will make a spot for me for any market that I can attend, they have 5 a week. This one was held downtown every monday in front of an artisans market, they said that it's a way bigger turn out when it's cooler, and it was hot as hell today.
In less than two weeks I will hopefully have Amycel full time to bring in there as well, I would of had them by now but had that bad delivery of spawn.

Anyways here is a pic we took to promote our facebook page and me at my table, I have my bags in coolers and leave a few bags on the table. It's a work in progress. Any tips on presentation?

Looking good man! Weekday markets are understably slower than weekend. Also variety is king. Once you have 2-3 types to pick from you will not only draw more customers but each customer will pick up more of each. Goldens are in season, maybe pick up some bright colored shrooms to sell with your kings. Have you approached local restaurants yet? I would start with just one, go top end.

I am doing that tomorrow, I have a nice wine and fine food place right next to me, we ate there the other night and the chef was all over the restaraunt talking to people, and also had some weekend specials, also we noticed everyone around us ordered his specials, that's what I was looking for, a chef that takes pride in his specials. It's my first target tomorrow, the wife and I made a list of places to go through out the week, we have been basing our weekly date nights around looking for suitable restaurants. I do need something colorful, I have a few things for trade if you or anybody has something they would suggest.

Specials are great for gettting your foot in the door. What you want is to be on the menu! From what ive seen most chefs use what i give them in an existing dish, then typically make a new dish for the menu once a special is a hit. Once your getting on the menu your locked in.

look to be around the size of a lunch bag, that's what i use with a stamp on em. I can cram a lb into them but anywhere from 1/4 to 3/4 fits well. It also depends on the variety as some are more dense than others.

Yeah, they fit 1/4 perfect and can also do a 1/2, that's for the kings, and I can squeeze a pound of grey oysters in there, I have been using them to give out to friends for a while, they are lined on the inside and I have seen them in my friends fridge(kings)look absolutely great after being in there over 2 weeks, and he even eats them after being in there even longer.

Looking good. I like those bags and the labeling.

Right now, I put my mushrooms in those green molded fiber pulp tills. The pint ones hold almost exactly a 1/4 pound when full. I drop the shrooms into paper lunch bags for packaging and keep the pints to reuse. The pint containers run me like .10/container and the bags are around $.04/bag. I keep several shrooms in the cooler weighed out and fill any empty spots. Only downside is I get a bit annoyed at people that think they have to fondle every single container.
