Microgreens to compliment mushroom business

Has anyone else tried microgreens to compliment your mushroom distribution? They are extremely similar in that top end restaurants use both and need a weekly fresh local supply. One of my buddies just dropped $400 on a 6 light, 4 shelf 32 tray setup. He is planning on doing about 1.5" coco coir per tray. The plan is I deliver his product along side my mushrooms and i take a 20% cut. Anyone else have any experience with this?

There's usually a micro supplier in cities already, if not consider yourself lucky. The competition in my town is a regional supplier with 30 acres of greenhouse in micros. Hard to compete with that. Especially since there's more health compliances with them.

Drake, welcome to el paso. Small city and minimal produce grown locally. The only other guy, which i dont belive is around anymore, was a unreliable stoner type. Were looking at starting with micro cilantro and beets then move up to fancy red and blue colored beets and corn.

Grower,I don't know what kind of outdoor space you have available, but asparagus could be a great money maker. A small patch a few feet wide by 10 or so ft long could produce 10 or more pounds a year. It's $6 a pound up here in stores and has no Flavor. Fresh locally grown has a slight nutty Flavor and is fantastic. It's a main component in my eventual farm plan.

I am interested in possibly doing microgreens. I also have a friend who grows them already who will deliver mushrooms for me when I'm ready (not quite there, but close!), but she isn't coming close to meeting the total demand in the area and has encouraged me to do it if I feel like it.
Her trick for getting around regulations is to sell them in the flats still living. Living plants are not really regulated in any way, so if the chef buys it alive and then harvests it you are not liable as the grower in the same was as if you deliver the pre-harvested greens (at least where I live).

Day 1 of construction went well. Now he just needs to tidy up the wiring and probably install a fan to move the heat off the lights.
And yes we will be exchanging trays so the chefs can harvest as needed. I already talked to all my chefs and there all game.
I only have a 20x20 yard but im moving. At my next house i will grow some asparagus with the .3 acres ill have. I have a 15x15 bed at my house in MD which i think my tenants just let go to waste. Nothing like fresh asparagus! And that bed in MD is like 5 years old now so im sure its monster spears!

cool stuff man, check out hugelkulture for making some easy no maintenance raised beds. Also planting in guilds is a very good way to diversify and give resilience to crops, corn goes very well with beans as the beans thread onto the corn. looking forward to how this microgreens project goes!

You're always on the move! I k of chef ain't easy added on a micrograms element to his business, but I don't think he's posting on here anymore. Are you going to be in your new house for 3+ years? It was my understanding that's how long it takes asparagus crowns to start producing.

You get a halfway decent crop on your second year, especially if you plant 1 year crowns vs going from seed. But you are right, it takes 3-4 years to really get established.

We have asparagus growing that was planted at least 20 years ago. You can't beat the flavor of fresh. Plant with strawberries to help keep the weeds down.

Have you thought about Kale? It gets sweeter with colder temps and might finish off well in the grow room.if you had them in planters you could move them in there for a few days before harvest. Not a micro green, but still pretty popular and people are paying a premium for it.

Hey! I work on a farm as the mushroom and hydroponic microgreen manager. I wouldn't call myself an expert on either (the systems were in place before I got here, I just got the basic rundown on how they work so I could continue production), but I've been working a lot with our system.
We use an ebb-and-flow system with a burlap seed substrate. Currently I grow pea shoots, a harvest mix (usually a mix of kales, collard, kohl rabi, and cabbage greens), a spicy mix (usually a mix of mustards, mizuna, and tatsoi greens), arugula, and basil (the biggest pain-in-the-ass). The seed can get expensive, but normally my yields are high and it's only a two-week turnaround for everything but basil. I can tell you right now that kale, mustards, and especially pea shoots, are very easy to grow and almost always yield very high.
Here's a link to a photoalbum of our system: http://imgur.com/a/esLLY
I took those pictures asking a different forum for advice regarding algae buildup - the algae hasn't been an issue, if you're curious, it just calls for a lot of sanitizing between batches. Anyway, the system I'm using is relatively simple and can really easily be dialed up or down depending on your needs.
If you have any questions let me know!
EDIT: I just realized you're the guy who was giving me help with my mushroom production! I've been doing the micros for a bit longer and have definitely had more success with them. They have been much easier for me to grow.
