The housing around the backside of the speakers and ear cover. Cancels out considerably more noise being closed. I don't like "noise cancelling" though unless it's fairly high end. The 180° phase cancellation on low end cans is usually a bit rough and you can hear it bleed into your audio. Plus, as a sound designer, I want as flat of a response as possible; and as minimal of incidence with phasing issues. I usually don't produce on cans though unless I'm on the go. Otherwise I've got my studio monitors for that.

If you're not going to travel with them then I highly recommend AKGs. They're awesome for listening, sober or tripping. Fairly flat response, but enough color and character to make just about any well produced track pop. First time I listened to an Orchestra play on my set was like a whole new experience. I had never before been able to so clearly pick out each instrument section, still hearing even the subtle parts separate from each other. I'd buy some more AKGs but as I said, I need something to play shows, and AKGs are more studio cans really.

Yeah, noise cancelling is only good in the high end, and there's other stuff I'd rather spend my money on like the HD650, or I could upgrade my amp+dac, but I've always been curious about the sound of high quality noise cancelling headphones.
AKGs are good. At the high end, it always becomes a matter of preference for what kind of sound you want. For some reason I really like the Sennheiser sound. It's a very warm and smooth sound which I like, not harsh and serious like Grados, and the soundstage on the Sennheisers is cool. I don't think I'd ever want to use them in the studio except to check that the end result sounds really good, but for serious error finding I'd definitely want something that's very transparent like the Grados.
What do you use for your studio monitors?

Pair o' Samson Mediaone 5a with a Phase Technology Power FL-10 subwoofer. I need to get some bigger monitors though because the sub really overpowers them unles I keep it at like 10% (which is no fun). Not sure what I'll move up to, but I'm considering some Focals.
