Help, wrongly dried mushrooms getting mold
    #23380681 - 06/25/16 12:23 PM (7 years, 7 months ago)

So a friend had to leave his growth unattended for 3 days. He just harvested some shrooms when he left, and didn't have any time for them to be under a fan. He usually fan dries them for two days straight and then puts them into a jar, with silica gel wrapped in paper towel. Silica gel is some cat litter, label says pure, nondusting, nontoxic; mostly clear, like every 20th or so crystal is blue; he just discards these. Crystals are kinda big, maybe 2-3 mm x 2-3 mm. Paper towel is split into a single layer, to help water passage.

Now he got back, and his pretty fruits (not too much but he loves them) are all molded! (ones in the center are new, those weren't in the molding jar)

Some are greenish, many blackish, some have white dots - disaster if you ask me. He put them under a fan right away. Is there any way for them to be salvaged? He nearly puked then, kinda disgusting, the smell resembled a cup of hot chocolate. Yuck.

Also, he has a little more that (thankfully) didn't mold (yet). Is his technique correct? Because, even after more than a week with the desiccant, they're still not cracker dry. Does he have to use oven and/or buy a dehydrator? He didn't want to lose potency and loses all due to mold, what a way to end the project at the really last step :/

Cheers and please help

buy a dehydrator and get your fruits cracker dry.

Thanks for your quick reply. A couple more questions, regarding the dehydrator -
1) don't those heat-dried mushrooms lose too much potency?
2) is it safe to eat those funky things when dried now?

Thanks

no its the opposite, not being dry makes them lose potency. heat dries them faster.
shitty pic but sure dry them properly and eat.

Just a quick question, the mushrooms were dried in a dehydrator to cracker-dryness (one day at 40°C, still damp, another day at 50°C, cracker dry). The were then sealed in jars (~400ml), not too much packed, with a teabag of cat litter per jar. Now, after around 3-4 days sealed, some of them are bendable again. What could cause this? Bad desiccant? Maybe they still weren't dry from the dehydrator? I'm afraid I had to use higher temp, but they felt cracker dry, so what not.

Thanks a lot.... Me being too much a noob.

You rule out the desiccant... From what you are descibing they were not fully dry... Before you call them "cracker dry" take one in your hand and crush it... If it doesn't crush like a cracker, then they aren't ready... If you have a variable temp on your dehydrator crank that motherfucker as high as it will go...
