Bruh you discovered your own way to make the fizz, the lucky few far in between who stumbled upon the shroom pro-biotic soda..
I try to tell people all the time they don't understand how fucking revolutionary this shit is..
I use ginger bug,, ! and it tastes a little better than sprite!

Ow maaaan.. that's heartwarming, you just made my day. Thanks for looking at it the same way as I do. 
Ginger bug is great!! It should definitely address that nausea issue right in the head!! I don't know how much tyramine is in this probiotic drinks, or if it's something of concern, but it might also be interesting to add some MAO-I with the brewing, perhaps ground Syrian rue or heavily beat up caapi vine. Hehe

Depending on what is fermented the brew could contain a lot of tyramine but it should be fine as long as you keep the syrian rue/caapi dose on the lower side. Tyramine is only a big concern with irreversible and with unselective MAOIs. The harmala MAOI in syrian rue/caapi are both reversible and selective for MAO-A (at least in low to mid doses). This doesnt make them 100% safe and Serotonin syndrome can still occur but as long as you dont overdo it youll be fine.

with this water kefir brew, its just unrefined sugar and some citrus...
I personally dont think it could generate that much tyramine to be of concern though. thanks for the info.

Look good OP great idea. Whilst I'm surprised it works I'm also not. During the fermentation all available oxygen is being taken up by the yeast and bacteria coupled with the heavier than air co2 layer you basically have a great storage medium imo... Also post ferment you have a slight alcoholic content which is also a preservative.

They store really good to confirm what you just said... it too has a slight alcoholic tart since I store em for a good long while, long enough to maybe convert that last bits of sugar to alcohol. you should try doing this, you seem to know a lot about brewing, do you brew anything right now?

The kefir fermentation also produces alcohol so I can guarantee its in there. I work with wine but have mucked around with kombucha aswell.

Occassionally, I add honey while refrigerated so the probiotics have something to eat too, raising their alcohol content even more I think...
id like to make some wine too, any personal tips? When I have my own vineyard!! xD

You filter the tibicos grains out then proceed with the 2nd fermentation(you may say 2nd soak) with whatever fruit juice together with the shrooms, I prefer calamondin because it never goes out of season here... Theyre good without freezing, chilled in the fridge would suffice... Not much nausea personally, I have a tough stomach though so that might be another variable.

Just make sure you add the maple syrup for the 2nd ferment, the time you add the shrooms in.. so the tibicos grains wont get hurt... I find honey ferments have this interesting taste to it that cane sugar doesnt have. Try it.

just plain water (not chlorinated, spring water works best) and unrefined sugar (maybe sucanat), if not available, you can use refined sugar + a teaspoon of blackstrap molasses per liter... this suspension should ferment for 2-3 days depending on the ambient temperature.

I dont have a kombucha scoby, I only keep tibicos grains for convenience's sake. you should definitely do a kombucha ferment and see how it goes.
