Just posting to keep this around for when my harvest comes in. Love kefir, love the idea of preserving fresh product this way. Can't wait to try it! Pablo, do you have any suggestions as far as quantities for doing this with cubensis? I wonder if the probiotic bacteria help with nausea too.

As far as quantities go, you can try, maybe 100 fresh gs to 375ml of water kefir juice.. so thats a 100g fresh to a bottle of wine.
I have an acid reflux disorder and water kefir helped me combat it(but now I medicate with turmeric tea) so I would say yes, it helps with nausea and hyperacidity as well.

I was making kefir back in a day but it never came to my head to ferment some mush. I have started making kombucha, gonna try it out with some soon genius idea man.

Haven't tried it with kombucha tea yet but it should work imo.
I tried it with water kefir ganoderma, now thats a very undesirable taste. Like, you have to force-drink it because you know it has medicinal qualities. Like the bitterness somehow amplified and took on new tastes on the bitterness 'spectrum'. Id drink some if I have some. Cant say no to that.

I own a kombucha brewery and can't wait to experiment with this..As far as shelf life goes our product has a 9 month shelf life but technically it never goes bad, ages much like wine does but needs to keep refrigerated. 9 months was a random date the Dept of Ag and myself agreed on since we never have product on the shelf that long.
Also, your friend storing tea at room temp...that scares me. If it is just brewed with water, no fermentation, I'd be willing to bet it has harmful bacteria growing in it after a week due to the pH.

Wow. How does your kombucha brewery pay off? Is it any good?
Yea man. My friend who stores his at room temp dont know shit about spoilage and shit. I remember seeing some of his work form some type of crust on top, he just shakes it off to break the crust and shit.

Taste gets boosted what ever you put in it on second ferment no doubt, with medicinals idk if its possible to make it taste better, maybe adding some sugars and let it steep in the fridge for a couple of weeks.

yeah it so much better when its aged, the carbonation is unbelievably smooth and leveled out. I am thinking to start running bigger scale myself with this brew.

Not a naysayer, or a know it all. Actually, just the opposite. I don't know what Keefer is. Is it like something related to yogurt. Iv made yogurt, win, sour krout, vinegar, cheese, and miso.
My understanding is that unless you ferment something for a couple months, until the alcohol or vinegar, or whatever applies.....the rotten bacteria will make you sick. So are you using the right word, when you say "ferment"? Or is it more of an extraction, using something (Keefer) that is already fermented.
Also, I Know how to make tij. Or however its spelled. And that is an exception. It's Honey and water. But before it turns into wine, it literally turns into mountain dew soda, and has such low alcohol content, that you can even give it to kids. Now that might be a hit at the next festival.....if you used shrooms honey to make it.

kefir is a culture you use to ferment things, similar to a scoby. I'm pretty sure that properly fermenting food is safe to eat at all stages. fermentation doesn't remove toxins released by harmful bacteria, which would still make you sick.

He said the first ferment takes a couple days, and the second takes a couple days.
Nothing I've ever heard of can ferment in a couple days.
So it's an extraction, using something that is already fermented?
Like putting a hotdog in vinegar.
The vinegar took two months to ferment.
The hotdog just got stuck in it to be pickled.

Unsure where to put it(i dont wanna dry em) so I made this heatless cold EXTRACTION by fermenting the mushrooms.
Research water kefir, they normally take 1-3 days to ferment your unrefined sugar to some 10s of symbiotic culture of yeasts and bacteria suspended in water. Water kefir has a higher population of different species than kombucha.
Will post back in a month or two about the kombucha experiment. I will post again. Thanks for dropping by folks
