What would you do?

So I've got my first farmers market lined up and it's on Tuesday morning. I was expecting to do a weekend market this weekend but it didn't work out and I've got some oysters I grew for this weekend that I need to save until Tuesday. Can I let these guys grow another day or two and then do my best keeping them looking good until Tuesday? I know a couple clusters have a day or so left to grow, but I'm afraid of letting the guys starting to flatten out go too long. What would you pros do?

Get your big clusters out, and leave those smaller ones for a few days. It's hard choice but the longer you leave the big ones the worse they will store, if you store them well now they should still be way good on Tuesday. And dude, congrats and good luck at your first market!

What he said, and your best bet for long storage is a cardboard box or a plastic box with holes and paper towels on top and bottom.

Thanks guys. I got a Buttweiser box I'll use with some wax paper inside and some wet paper towels as stated. I appreciate the fast responses.

You wont need to wet the paper, and i wouldn't used waxed cardboard. I use amazon.com shipping boxes for 1-3 lb sales since a lot of them are wide, flat and 3-6" tall.

Good to know. I've got plenty of those boxes around. The mushrooms are harvested and currently drying for a bit as they were a bit wet from the FC.

Drop the humidity shortly before picking them and dry them out a bit while they are still growing, I've read it's useful for longer shelf life.
Can't say ive tried it as my humidity is always way lower than it should be in the first place

Lol. I've dropped the humidity to 70 for the other that'll get picked tomorrow or Saturday.

Just wanted to share my experience. I packed the mushrooms in boxes with paper towels and they sat 4-5 days in the fridge. I sold out at the market, so they looked ok, but really not awesome. I did keep a small cluster, about 2 oz, in a quart ziploc in the fridge with the zipper just cracked at one end. I just ate it today and it still looked like the day I picked it. And it's been 9 days. I think there may be something to keeping the mushrooms in plastic bags in the fridge for freshness just based on this. I will be storing larger amounts in larger bags possibly in boxes in the fridge in the future and I will update how they store.

You can store oysters for weeks if you can keep the temps very close to freezing. I have two chest freezers hooked to STC-1000's and can keep most mushrooms almost indefinitely @ 34F. As long as they don't dry out they'll look almost perfect for a surprisingly long time.
Now I don't stress if I don't sell out at the farmers market, just pop 'em back in the fridges and wait another 6 days Of course pulling them out, putting on display and then back into the fridge shortens the storage time and usually only gets me to another market day.

This is crazy dude. There's not really any reason you should try reselling your left over stash from the previous weeks market. Its kinda shady and no way those mushrooms are up to par.

I dont think he means display mushrooms, or do you moonlight? More like bins he took out the fridge and never got to displaying. I know i put all my bins into mylar lined insulated bags i got from that crappy blue apron food service and leave em in my truck with a windshield shade. They keep the mushrooms cold for a few hours. Now typically if i have left overs i sell them to the restaurant that hosts the market but i realize not everyone has that convince.

The ones that keep til next week show almost no signs of age or wear as long as they stay in the camp coolers. Display mushrooms are usually traded after market, or are sent directly to a local grocery store. I've also used unsold, weighed and bagged leftovers as samples for restaurants; not as many Chefs work Saturdays but it helps spread the word, even if they aren't there.
