I read not to use cheese cloth because of fruit flies being able to work their way through. I've been using coffee filters with rubber bands. I was about to use gloves, but I figured a good hand washing was good enough. I'll have to start using gloves, should I wipe them down with iso like I would doing SAB work?

cheesecloth is fine as long as you don't get it wet and use multiple layers, I did usually use a coffee filter on top as extra insurance though

the scoby is not to be eaten, it's the mother culture that allows you to keep making kambucha

Well, if you buy a bottle of raw kombucha, you may see some little pieces of SCOBY floating around and that's ok and safe to drink. But yeah, the main mother culture, like the one pictured, should probably not be eaten.
