My first kombucha 'SCOBY' 2

I heard about kombucha on the Joe Rogan podcast and after finding it at my grocery store just on a chance, I decided to try some. I bought a bottle of GT's original and shared it with my girlfriend, which we both throughly enjoyed, so I looked up some instructions on how to brew my own. After three weeks of waiting and watching (which I'm getting very accustomed to growing my own cubes) I now have a good looking SCOBY. I originally made two quart jars that I happen to have lying about but one accidentally tipped over when I was uncovering the jars to show my girlfriend my new found hobby.
The photos below are of the good looking culture, while the second culture that was tipped was thin in the middle and tore a hole. I'll still use it to brew as I don't see any visible signs of contamination that I know of, being a noob and all. I'm sure it'll recover just fine but I'll still be keeping an eye on it/them.

I'm really excited to be brewing my own kombucha, it's expensive at the grocery store and this should start saving me money here very soon. I've begun four more quarts to grow more SCOBY, I just hope I can get the flavor to something my girl and I can enjoy. I'll be experimenting with different fruits for flavoring once I have more SCOBY to work with, for now I'll be saving all my GT's bottles to be recycled.

There are benefits from the probiotics, enzymes, aminos and such. It's expensive to buy so unless you can afford to support your habits, I think it's worth it to brew if you'll be drinking a lot of it.
I started my first batch today so I'll find out for myself soon the difference between store bought and home brewed.

Yeah, I'll make sure to wash my hands well when I'm handling my scoby.

I mean... once established, they are pretty resistant to contamination. Just remember a scoby is basically a symbiotic culture of bacteria and yeast.. my general rule of thumb is to never handle them with my bare hands or if I do, very minimally and yes always wash your hands first. Even then.. humans are some bacteria and yeast filled motherfuckers. I usually wore latex gloves when making batches so I didn't handle it directly with my skin. But yeah... they are pretty resistant to contamination, mostly as long as they are in their acidic environment (the kombucha)
You want to keep that scoby covered with sugar-vinegar-tea at all times pretty much. The only time my scoby was out of that was when transferring to a new batch, I keep it on a plate temporarily and cover and put in the fridge.
Your worst nightmare with kombucha is fruit flies. And they are crazy attracted to kombucha. Like it's way worse then having a bunch of ripe ass fruit hanging out.. they are CRAZY attracted to kombucha. We never had fruit fly problems until we started making kombucha and then all of a sudden they were everywhere. Had to make a bunch of fruit fly traps.
Make sure you never let fruit flies get anywhere near it. And make sure your kombucha container is very well covered/filtered (many layers of cheesecloth wrapped tight around the lid with rubber bands works great. And make sure the kombucha or scoby isn't touching the cheesecloth or whatever you use to filter it.
Learned that the hard way. Once our jar was too full, the cheesecloth was hanging too low and the scoby and some kombucha was making contact with the cheesecloth and even though we had like 10 layers of that shit, fruit flies got into it and laid eggs and once fruit flies are in your shit it's game over for that culture. Don't get that cheesecloth wet. Nice and tight.
Once you have done several batches of kombucha, each batch your scoby will grow and gain an additional layer. It will get thicker and thicker You can start peeling off a bottom layer, and have a baby scoby. Store your baby scobies so you have backups. Then to store baby scobies, just make a mini batch of sugar-vinegar-tea and put it in a mason jar... use glass because it's acidic and will degrade plastic. and store it in the fridge.. it goes into hibernation mode in the fridge and will store for a long ass time.. just have to change out the tea every few weeks or so. Note use plastic lids if you can... metal lids will straight corrode and rust.

Nah man, the people that died from drinking kombucha is like, 3 or 4 people.. and it wasn't from "bad bacteria" it was from severe acidosis caused by extremely high level of lactic acid. They were consuming tons of it daily and who knows what other shit. It's extremely good for you in moderation. In excess anything is bad. Water can kill you if you drink too much too fast.

For a while we were making way more than we could drink.
Now I need a new mother.
