Long time no post here, been working a lot on my proyect.

 These are my 1st grade cultures of P. eryngii and Hericium erinaceus. They are inside a wine fridge but its turned off, I just use it to mantain steady the temps of the cultures, the fridge is inside my incubation room that maintain at 24C all time with a portable A/C well instaled. (And still been doing spores to PDA medium just for practice)
I did well done 2nd grade masters(WBS) on mycobags each bag weights 3kg of myc.


Here you can see a well consolidated G2G myc on a mycobag.

Ive done to this day 200kg of 3rd grade myc on straw substrate. Wheat straw with no supplementation, just pasteurised.
 The logs were really tight packed with straw and myc, Ive used 1.5kg of myc to inoculate 20kg logs of straw, one day after inoculation Ive made the holes for ventilation and the myc is running great. All these production is P. eryngii. And still have 15 2nd grade myc on grain ready to pass it to straw logs. That means that I have 45kg of 2nd grade myc and I will inoculate like 600kg of straw.
I have already 2 logs of straw fruiting on my new growing room that is holding good temps and humidity. I have a great Aquafog fogger and 2ton AC modified for resisting humidity. Got a laser thermometer and with the laser you can see also the good humidity level inside the GR. 

And here my first flush in the new growing room.

I have a good demand, Ive made good business contacts with local chefs and they love the product.
My question here is HOW MUCH my logs will fruit, I have to be certain at this scale in my business. Ive fruited shiitake and KT, but never at this level. As I said Im not supplementing my straw, just plane pasteurised wheat straw. Each log is 20kg of 3rd grade myc. Ill be glad on your response...

Nice looking fruits on those logs! I am not sure how much straw produces with Erygii, but I have read it's far less BE than supplemented sawdust. If Eryngii is your main crop I would suggest moving towards supplemented sawdust, higher BE, and I have heard better quality of fruits and shelf life. But, it looks like your doing great with what your doing, what strain are you using?

Im not really sure, Im a biologist from Baja I took this strain from the mycolab of my university, what I do know is that the mycologist bought this strain from fungiperfecti.

Looking good, look into sourcing some feed grade oat, rye, wheat, milo or millet for spawn. Much cleaner and cheaper than WBS.

yep. WBS can be a reallll drag. Also be sure to have a good spore outtake, spores can do a lot of damage to your health over time.

fungi perfecti is not a commercially focused provider, he is more of a dumbass stoner that grows shrooms and sucks up government research grants. I've yet to be impressed with there strains or service. I highly recommend amycel 3015 as will a few other cultivators here.

I have their Enoki strain and it's great, though I have no other Enoki to compare it to.
Pichardo, I grow K01 from Aloha, If you continue to grow Eryngii and want to try another strain sometime I highly recommend it. That is awesome about Ensanada, and sounds like a great opportunity. Is it the Eryngii that the chefs you have given it to like?

Concidering it's growing so well on straight straw, I think not. See how it goes and if you feel you could be doing better then yeah. But also, I would try it on supplemented sawdust first before buying a pricey culture.

Yes, only KT. Im improving on my LC tecnique, I need to succeed on my LC cultures for Lions Mane to fruit on commercial scale I think. My 2nd grade myc of LM never consolidated and and started to fruit at a week of incubation inside the mycobag.

With the FP strains i have purchased from them, trades and other vendors cultures have blown them away more often then not. And im doing a commercial grow where weight and time matters. I wasted my time with there TS-1 shiitake.

Honestly, you are better off leaving the LC out of it, and just get into a nice routine of agar>grain masters>grain bags and so forth till you run it 3-5 generations. But that's just opinion, many people have plenty of success with it, I have had some failures with it, enough to where I just leave it alone and just make sure I always have new masters ready as soon as I run my spawn out.

Yeah it seems agar/grain its more trusty, but I bought a waring/eberbach 2LT blender brand new that cost me like 1.2 thousand dollars and I want to succeed on LC culture too, maybe later, first I need to make money of this proyect and maybe later on with money and time work improving on my LC technique.

Yikes! For the price, I just always assumed they were superior, but now that I think about I dont think I have ever really heard of any commercial grower using their strains.

Fucking sweet, I would be wanting to use that blender too! How are you doing it? Just the liquid inoculate where you blend a dish with sterile water and disperse, or where you add nutrients and yeast ect..?
