How does a person go about finding a wholesale buyer for oysters in the US? I'd like to find out about current prices etc..

I've just been gauging by these reports. I don't think many wholesalers would give out that sort of info readily.
As far as finding one, couldn't say.

Have you heard of google? Seriously it's easy to find produce companies. Then you ask to speak to a buyer around lunch time. They always get to work by 5 or 6am and leave around 2 or 3. It's like asking a girl out you just have to put yourself out there. I get 3-4,50 per lb on oysters and 4.50-6 on shiitakes per lb. Most wholesalers won't give you a premium even if your product is superior.

I'm not sure whose post you're responding to Drake, but I think OP's interested in practical advice on how to find a wholesaler who will buy your product rather than just a list of wholesalers to call up.
Is it as simple as making calls and putting yourself out there? Or, are there other considerations that will determine if a wholesaler will do business with you (monthly production, quality, reputation, distance from wholesaler's distribution facility, etc.)?
You are one of the few who produces on a wholesale scale, so advice on establishing relationships with large buyers and the process of getting purchase orders from them is, I believe, what OP is asking. I'm curious as well if you're willing to share.

I actually just wasn't hitting on the right word, 'produce'. I don't mind calling companies up. On an unrelated note, how do you guys feel about stems? I've eaten the golden oyster and summer oyster with stems on, they don't bother me at all. I wonder am I just particularly not picky or is it more a strain related issue. I had the co2 level a bit too high I think and I got some stem weight, maybe it won't even be an issue if I adjust things for next time.
Also I actually prefer the above 2 mentioned strains over erengii for flavor.

like I said it's like asking a girl out. you just have to call up, I call it "market research", and ask pricing and volume per week. Package size and species, etc. Anyone on this link is reputable, I have sold to two near me on this list and currently only sell to one wholesale distributor

I like oyster stems - texture and all... shiitake stems not so much.

If you keep the RH high on shiitake the stems stay soft.
