Commercial Oyster Grow Progress Report

I started a commercial oyster grow last month with a partner and so far its going pretty well. So far we have sold to 14 different restaurants. So far each one only wants 1-2lbs each but we are hoping for more sales once they try our oysters...
The pinks have really been a lifesaver as they are producing pretty nicely in the heat. We are starting to phase out the kings as its just too warm. . In terms of yield we are averaging 2.5 lbs per log....our logs are 3ft long and 9'' around. Ill update you guys on wet/dry substate weights. Haven't got around to weighing them yet.
We are still pasteurizing with lime wich I'm not a fan of but we are on a budget and trying to use whats available to us. When we get some cash flow we will be switching to a burner and 55 gallon drum but my partner is insistent that it needs to be electric because anything else would freak out his landlord. I don't see an electric burner having the balls to handle a 55 gallon drum....has anyone used one?
I took a clone from a nice cluster today. Once I get the genetics factory up and running I hope to see our yeilds improve some. Any tips on cloning would be appreciated. I've only done it once with a cube!

I have bottled gas yet free electricity so I'm probably going down that route. I was planning on just picking up 2 or 3 of those cheap 3KW boiler heaters and have them on separate circuits in the house.

My buddy SpeakSoftly made a dual 55 gal drum sterilizer that's all electric- uses a hot water heater unit.
Edited to add: he's got it completely automated too

Gr0wer has a parts list on his automated greenhouse build for a 55 gallon pasteurizer that I've been thinking about building, might be helpful to check that out too, he also has some videos he put up on youtube where he explains how he uses it and what problems he's had / resolved.
