P. galindoi not pinning - advice?

So, I'm taking a stab at growing some galindoi for the first time. I've been using the PF Tek technique for cubensis for many, many years without issue and basically, have done the same exact thing with the galindoi.
So far, no issues. Mycelia growing like wildfire, but it seems to have overgrown my cakes and the vermiculite that I applied as part of the "dunk and roll". I see plenty of stones around the periphery of my cakes. But it's been 2-3 weeks now with no pinning. Am I doing something wrong here?
Temp is maintained at 77-78 degrees F. I open the chamber and circulate some fresh air a half dozen times per day. Humidity seems spot on. Minimal ambient light exposure.
Maybe I just need to wait longer? Is casing absolutely necessary with these? Any advice would be greatly appreciated!!!

Is there water regularly evaporating off the substrate surface?
Typically a big pinning trigger. Have one tray recently cased so no timelines from me yet

Those look icky lol. Never seen someone try stones on cakes

Well, I keep misting the vermiculite on and around the cakes and it seems fairly saturated. The vermiculite is fast becoming overgrown with mycelia though.

I have never grown these, but i have grown cakes.
These arent in a SGFC, are they? doesnt appear to have any holes in the tub. They arent getting any FAE. this could cause problems as well. ALso, though, i have never seen anyone grow these on cakes.. usually just see people using grains to grow stones. and then some use grains to spawn to bulk and fruit, i believe. but i have never seen cakes. I think they have sorta different conditional needs than Cubes. i could be wrong.
EDIT - also, there is only like a half inch of perlite in there.. usually you use about 4-5in deep of perlite.
