If you are REALLY going to wait ONLY 1 week I think you can get away without re pasteurizing. If you are holding pasteurization temps then you're poo will be OK as is within a week I think.
Trying to re-pasteurize will only bring your substrate into the 'sterilized' zone which isn't good for poo.
How are you pasteurizing?
