PC rack question
    #2329790 - 02/13/04 08:21 AM (20 years, 1 month ago)

Ok so there is a 8qt PC for sale at wal mart right now but it has no rack and its brand name is mirro I believe but anyways I was told by a friend that I could use towels folded into a star shape at the bottom instead of a rack to hold to jars above the water and was wondering how I would go about this? would this cause any problems or is there a better method to use and also would the towels burn or maybe just soak up all the water and not work properly or what, also another question is that the box says the PC works at three levels 5,10 and 15 pounds but is this the same as psi's or is it different when they just say Lbs because it makes no mention of psi's but I assume they are the same thing but not sure.

psi = pounds per square inch so yes

its perfectly fine to use a towel, the towel will not burn as long as water is present in the cooker.

just use bigger jars. Use the size above 1/2 pint.

Unless I misunderstood, you can use these jars so you don't need a to worry about the water level. ALthough your jars may crack.

you always have to worry about the water level, with out it you are baking your substrate, youmay lose them all to breakage, caramelization and will probably not sterilize them at all... a rack can be rigged up by placing towels in the bottom, about 6 empty jars and a plate on to of those...it reduces the capacity but increases the chance of success...

If I was going to use the towel method as a rack how would I do so, would I just fold up the towel and place at bottom and fill cooker with water to soak the towel and how much water should there be? Do i just place the jars right on the soaked towel or do i put something else on top first?

I also have some plastic jars from myco supply, would these be ok to put right in without a rack or will it still cook the substrate to death?

don't put anything but metal or cloth directly on the bottom. the metal bottom gets several degrees hotter than everything else.

THOSE JARS WILL BE FINE. YOU CAN SET THE JARS RIGHT ON THE TOWEL.

AS FAR AS THE AMOUNT OF WATER, ADD ENOUGH WATER TO ENSURE THAT YOU MAINTAIN STEAM AND NOT TO DRY THE COOKER OUT. AS PRISONER SAID CARAMEELIZING OR DRYING THE SUBSTRATE OUT IS CAUSED BY EXCESSIVE HEAT AND LACK OF WATER, RESCECTIVLY, IN THE PC.

PLACE THE PRESSURE SETTING ON 15 POUNDS OR PSI AND HEAT UNTILL YOU HEAR STEAM EXCAPEING AND TRY TO MAINTAIN THAT TEMP...NOT TOO MUCH AND ENOUGH TO MAINTAIN PRESSURE FOR AT LEAST 45 MIN.

HOPE THAT THIS HELPS..PEACE

So after I put the cloth at the bottom i can just lay the jars right on top of the cloth, also i'm thinking the best way to measure and make sure i have enough water is too add in the amount of water instructed by the manual and then adding in the cloth correct and maybe adding in a little more but the jars in a way will still be in contact with the water so what should I do

AS LONG AS TO WATER DOES NOT COVER THE TOP OF THE JARS WHERE EXCESSIVE WATER GETS IN THE SUBSTRATE,YOU WILL BE FINE..ABOUT AN INCH OF WATER W/ THE TOWEL WILL BE OK

that is correct, make sure the cloth is pegged down good by the jars because when the water boils it can push the cloth around and some jars could end up on the metal bottom if your not careful

place the cloth (maybe presoak it) in the bottom. place your jars in (make sure cloth is held down nicely). pour in water until there's at least .25" standing in the bottom. i wouldn't recommend more than 1" standing water.

So i just want to make sure here, i put 1 inch of water in the PC then add in the towel(which depending on size of towel will soak up almost all the water) to make sure the jars don't touch the bottom OR are you saying put in the towel fill it up so there's about an inch of water above the towel? I think you meant the latter but just want to make sure. One last qeustion if its the latter how thick should the layer of cloth be? I'm using 1/2 pints so an inch may bubble into the jars will it not?
