Hay -straw the definitive answer

I have read some absurd post on this subject.
Straw is considered the residue from a grain crop after the grain has been harvested.Yes there can be some mature grain that was not harvested. COLOR is no indication that a bale is straw! Hay can have a bleached or gold color.
Examples wheat straw, rye straw, oat straw , barley straw , soybean fodder, corn fodder (yes corn and soybeans are sometimes baled)

  Now the confusing part. Hay can be any of the above. For example wheat,rye,oats and barley can be cut in the vegetative stage all the way up to having mature grain (imagine using a bale for mushrooms with all the grain in it, big difference in nutrients).All grass and legumes (timothy, bermuda,orchard grass, clover, alfalfa, brome, gamma grass, sudan grass,etc)are hay. The earlier they are cut the more nutrients. The later they are cut the more plant fiber and seed.
  Hay never turns into straw ! Hay can loose some nutrients over time.
In summary Straw is for substrate, Hay can add nutrients to substrate.

AFAIK hay is not a good bulk substrate option precisaly for that reason, it is more nutritiuos and sometimes you can see some green in it, which is no bueno.

The primary purpose of a good bulk substrate is to serve as a water reservoir once it's pasteurized (to knock out the bad stuff so that mycelium can gain an edge against competitors).

If the bulk sub were nutritious enough, mycelium would have a hard time in the race against competitors and the substrate would probably contaminate in the end.
