My caramel recipe

Okay for those of you interested in making caramel, I came up with this recipe a few years ago for one of my food science classes. You can probably find some stuff similar to it, I just choose these proportions of ingredients. A scale here might help..........
% by weight
water 8.2
Sucrose(table sugar) 37.4
Corn Syrup (16.1)
Sweetened condensed milk (15.9)
Butter (probably want to use unsalted) 21.3
Salt 1.1
just mix it all up, and then heat it for a good amount of time with stirring. Ill post more about it later, I think I had a recipe using amounts more easily measured (tablespoons, cups etc. etc.) So Ill look for that and post it later. Enjoy

11.5% salt?? that sounds like a lot..

Yeah I meant 1.5% I fixed the recipe, I was pretty drunk when I posted it. Sorry about that.

you want to cook it on probably medium for a while until it gets rather thick, and then let it cool, depending on how much water is left it may stay in a rubber state, or it might have enough lack of water to undergo a glass transition and be hard. I usually like to make it kind of soft, so I just keep cooking it until its a really thick syrup, let it cool and just eat the caramel.
