Where did I go wrong with my Pastyplates?

So this is my first go at agar, and my "pastyplates" have a ton of condensation on the inner walls. I'd like to know 2 things preferably.
1. Where did I go wrong so I can fix it next time. and 2. How can I get rid of the condensation? Should I do so prior to inoculation or does it not really matter?
Here is what I did, I followed the tek as best I could other than I used a different agar recipe.
I heated up my agar mixture in a pot on low heat until dissolved (I used an MEA recipe, not the pastplate one).
I loaded my little rounds, following everything else in the tek to a T.
I SLOWLY heated up my PC, starting on Medium heat for about 15 mins, then increased it one notch on the dial for another 10 mins. I continued to progress like this until almost an hour later I was finally getting steam flowing out of the vent pipe. I then let it "exhaust" for about 8 minutes until finally adding on my 15 psi weight. I then PCed for 45 mins, and let it cool for 24 hours, inside the PC.

A folded paper towel under the foil would help

You didn't do anything wrong per se. There will be some condensation. Different cultivators deal with it differently, Blindingleaf sterilizes pieces of cotton or something (in a jar) with the plates and carefully wipes them in the SAB.
I can't remember who else does what, but many people leave them upside down for a while. The paper towel on top will soak some of the moisture back up. I just leave it. It'll dissipate after a couple days anyways.

Yea I get condensation too but it has never been an issue. after about 48 hours it goes away.
