If they are black AND have a very nasty smell, then I would suspect rot.

If they are turning black, then they are starting to rot. This doesn't mean that they will be so rotten that they are inedible. Place them in front of a fan for 24 hours first. This will remove 90% of the moisture. Then place in a dessicant chamber for the last 10%.
