Spongy Black Tissue in the Base

I have three rather large fruits drying right now. They were taking longer to dry than the smaller ones so I cut them up into smaller pieces and in the base of the fruits I saw this black spongy tissue inside. I'm sure it's normal but I didn't know that this was a thing. I have never heard of it before, does anyone know what it is? I'm sure many of you have cut up fruits before and have seen the same thing. What is it?

Bruising. If you don't handle them much and dry them quick, it doesn't bruise much

I see, well, on a side note, I have all of my dried fruits in a plastic sandwich bag and the sandwich bag is inside this case sealed with a zipper. Will this be enough to protect them from oxidation for a few days?
