Is all of this open space going to fill in in this mono? What's the reasoning for this?

The reason is due to genetics. Your not going to be getting a full canopy. I would harvest the big ones as the veil breaks and just see if more pins come in. I would also mist the surface pretty good and get more humidity in there.
What temp is the room at?

Try casing it next time and you will likely get a better pinset. Also genetics play a role as well.

Room temp is at 72-76 F!
And I did case this tub...

It looks dry. Not been misting enough.
It really doesn't look cased. It looks fully colonized.

I see. You didn't throw into fruiting until it was colonized through the whole casing personally I case and fruit. Works the best IMO. I mist it once or twice a day. Yours looks dry ATM. It needs to have beads/glistening surface with no pooling water. A casing would retain the moisture of a misting longer.

I waited til the whole top layer was taken over before I cased it! So should I have just cased immediately after mixing my spawn and substrate?

What do you use for your casing?
10 parts verm, 10 parts peat, 1 part gypsum and 1/4 part lime! And I made sure it was at field capacity!

No you should have fruited it when you cased it. Right after full colonization. You waited like a week until it colonized the whole casing. You don't need it to have any colonization.. It pins through it. A casing is supposed to retain moisture on the surface of the mycelium. If it colonized it(which yours did), it's just an open substrate lol, which will require proper misting amounts (not too much or too little) and frequency (whenever it isn't glistening anymore).
