Is it possible to have too much humidity in a shot gun terrarium?

So I've got 2 shotgun terrariums, each filled with 5 inches of soaked perlite. The humidity gauge reads 99.9%. I fan them out twice a day (morning and night). I hit them with 8 hours of light from full spectrum bulbs every night. They sat there for over a month and did nothing. Pinheads would start but then not grow at all. Now a few of the cakes are growing mushrooms but they're super small and sparse. The temperature in the room is 60 degrees but these are supposedly the Mexican strain which are supposed to fruit well at lower temps. My question is: Is it possible that humidity levels can get too high in shot gun terrariums?

Possibly, but doubtful.
Did you have a cracked window and fan on low (not pointing at SGFC) to bring more circulation in the room? I think FAE (lack thereof) would more than likely be the culprit.

If you built them right, you shouldn't worry about humidity levels. Trust your SGFC's to do their thing. Hygrometers aren't accurate and the really important humidity is on the surface of the cakes.
Mist the cakes, fan (if you want) and rinse and repeat when you see that the water from the previous misting has mostly evaporated. You don't want misting schedules.

60F is going to slow things down for sure.
Only fan after the misting, if at all. Mist when the the mist from the last one dries up.
Some pics of your cakes and SGFC would be helpful.
@feedyourmind Turning on a fan or creating a breeze will disrupt the function of a SGFC. It usually dries it out and dries out the cakes.

Thanks for the correction, don't mean to post misinformation. Been a long while since I've used a SGFC. I def did have a window cracked though at the very least.

Thanks for the replies folks. I'm starting to think that the low temperature is the culprit. Has anyone every heard anything about low temps affecting yield sizes? These are allegedly mexi-cubes which I purchased because they supposedly fruited well at temps as low as 50F. I'm starting to think that was either A. Not true or B. These aren't actual mexi-cubes. A major bummer this is for sure.
