Anyone have any good panfish recipes to suggest?

Simply looking to try new yet fairly simple recipes for panfish such as perch and sunfish. Preferably with spices that one would most likely already have in the cupboard such as garlic powder, pepper, paprika, chili powder, basil, parsley, and so on. Frying or baking although I prefer baking because it's healthier but either/or as long as it tastes good! Because of the size of the fillets I'd most likely be cooking the fish whole minus the head of course. I'm going to be catching a lot of panfish this Spring.

Tried the recipe tonight. Was very good. Something I have to ask... I'm kind of nervous about this because afterwards I read it's not really safe to do and not to mention I have a weird tickle in my throat. It feels sort of the like the same feeling I had one time when I ate a wild growing orange in the woods. You're not supposed to eat the skin of the fish right? I didn't fillet the fish. I scaled it, cut the head off, took the guts out, and cleaned it very good. I then pan fried it. But I ate the entire fish minus the bones, top and bottom fin but skin and all. I did eat the tail fin as well. These panfish, this one happened to be a crappie, I catch in a lake that is not in a neighborhood or near houses. It's just on a stretch of road leading to the town next to mine.

As Tears_Acid said Coke is a good marinade. Never had it on fish but it's good on ribs and BBQ chicken in the Dutch oven.

for panfish i dont usually cook em in the pan. if its big like a bass ill cut off the head and spine and stuff it and bake it usually unwrapped. stuffing includes spices, greens, and lemon slices. wrapped in foil and cooked over the fire works fine too if youre camping.
for smaller fish like trout i keep the head on and spine in and then stuff them with similar stuff. was camping recently and i stuffed them with caramelized onions and garlic, fresh douglas fir tips and lemon slices. wrapped in foil and cooked em over the fire.
ill do a few mins on each side (maybe like 6 depending on how many fish are in the foil). youll know its done when you put a blade into the flesh, touch it to your lower lip, and its warm to the touch.

baked in foil with some butter, seasoned with lemon pepper and thyme.
or just the basic buttermilk/milk bath then breaded with cornmeal and deep or pan fried.
