Why does grinding kill germs?

One thing I've never been able to understand is why grains like millet and rye need to be pressure cooked, but if you grind them then they don't.

It can't be bacuse the heat gets to them better. Heat just don't work that way.

good question but the only answer I could think of is the shell has something to do with it but like you said heat dont work that way I dunno

what do you man that heat doesnt work that way, heat does get to them better because of a lower mass and more surface area is exposed

The bacteria that forms that yellow sluge on the bottom of fucked up grain jars is often found hiding in the grain. When ground up you expose it. It's a tough little mother fucker that can survive PCing even. That is the main reason you soak the grain for 24 hrs before using it. Causes the little bacteria endospores I believe they are called to germatane and then the PC can kill them off.

I just add water to the grains and PC immediately, no problems here.
