I really dig some of their stuff. A lot of bands evolve over time, but i do know what you talking about with them.
If you like Jefferson Airplane, you should try to see Hot Tuna if they come around. I see them at Wanee every year, but it is Jack Cassidy and Jorma Kaukonen.

I never got past their Surrealistic Pillow CD. Listened to a few tunes they made in the 80's and personally thought it was pretty bad.

Let me apologise in advance, because in my opinion by around 1980, the Jefferson Starship sucked, but musical taste is subjective, and it depends which decades you grew up in. But the original version, which made 4 albums was really good. They had all 3 singers from Airplane (Kantner, Slick and Balin). Jorma and Jack Cassidy were gone, into Hot Tuna, but they picked up a real hot guitarist from High School because Kantner knew his science teacher. They alternated 2 guys between bass and keyboards, found a good drummer and had this old black dude, Papa John Creach on the fiddle. I saw them in 78 at the baseball stadium in Milwaukee, and this may have been the greatest concert experience I ever had, after quitting hard drugs.
After that the band just deteriorated continuously. Marty Balin quit forever. Then they had a Starship completely lead by Paul Kantner, which I saw in 79 or 80 backing up Petty and the Heartbreakers, and it was kind of OK. Then Kantner quit and they came back with Grace Slick and some high voiced singer who had that hit Jane, Jane, Jane I thought it was a really bad version of Journey, and I despised Journey by that point. I believe they could only be called Starship because of legal issues. Part of the reason for this deterioration might be that Kantner and Slick used to be married. Also the history is confusing because Kanter and different collaborators did some semi-solo albums called Jefferson Starship (Blows against the Empire , etc) before the full fledged Jefferson Starship got formed)
At any rate I highly suggest you check out the first four real full band Jefferson Starship Albums: Firefly, Red Octopus, Dragon Fly and Earth.

I think that After Bathing at Baxter's was a pretty solid album. It's not as pop as SP but I think it works well.
