 Shiitake fruiting strategy

I have two bags of Shiitake that have been colonizing for over 2 months. They blocks are almost entirely blistered and there are a couple in vitro fruits on each block. I have searched for a definitive strategy for fruiting them, but I can't seem to find a consensus. My questions are:
1. What temperature constitutes an ideal cold shock and how long should it last?
2. Is the shock performed when the block is still inside the bag?
3. Is there a dunk involved?
4. After the cold shock, should I strip the bag off and/or rinse the block?
5. When should I slap the block and place into fruiting chamber?
6. Should I let the blocks dry out at any point as some have suggested?
Sorry for all the noob questions - this is my first time with Shiitake. I would really appreciate knowing others' strategies for Shiitake that they have found to work.

Here's how I do it
Strip the block from the bag when it's really brown! If not, leave it in a bit. If you get it out too early yields will be low. Dunk it in real cold well water, humidity shock and cold shock in one, then put it in FC. The block will dry out there, as soon as it gets to 60/70 % pins will form. Keep misting during pinning, lower RH afterwards.

I agree with frog48. Also I give the block a good slap while it's in the bag and fully colonized.

could you go a little bit further into the "slap"? do you just take the bag and clash it against a wall?

I think he means slapping the bag. I turn mine upside down, put it in a well lot cool room (30-60F) and wait 4-5 days for pins to form. Then I strip the plastic and put them in fruiting with very high humidity until the day before harvest. That way I get 2 sets of pins often. One before the bag comes off and one after.

After 2 months incubation, i remove the bag, flip the block upside-down and place the block into the fruiting chamber. I give it a nice shower with cool water for the first 3 days in the fruiting chamber. Depending on temps you'll have your flush in 10-20 days after. As long as your temps are above 60F you'll get your flush in 14 days or less. This is for the 3782 strain with %20bran supplementation.

Thank you all for the responses! The blocks have already been sitting in my 55-60 F basement for a few days. I will plan on giving them a slap while they are still in the bag and then giving them a cold dunk. How long should I cold shock for?

Yes for the shock. Also my blocks dont pin on the top of the block, but they do on the bottom, so flipping them keeps the mushrooms from growing through the shelves.

For the second flush and dunk i remove my blocks to dry out for a week then dunk in a tote with another tote on top with weight on the inside of the top tote. I use my grain filled 5 gal pails as weights. After an overnight soak i use my hands to squeeze air out of each block underwater then let them soak another 5-10 min before placing back into the chamber. Ive seen really good 2nd flushes using this method, sometimes rivaling the first flush. Doing the squeeze and short soak really bumps up the moisture, you can feel it in the weight.

That is wild man. If only I could do that with 400 blocks a week I could make a lot more $ without too much more work. My second flushes have been more like a half pound tops, which is why I quit doing it.

You work on a whole different scale lol. I typically have just 4-6 blocks, and i sell for $24/lb of caps at market. Soon i'll be doing batches of 10-20 as i shift from kings to shiitake in my tiered unit, prices will drop as quantity increases. Drake, do you sell just the caps or cap and stem?

depends on the buyer. at the moment I just have one buyer and they just want caps. but they pay a premium price. i think i average about a pound of caps per block.
