If I'm not mistaken, that sort of chicken is marinated in a wine mixture prior to being BBQd..

Heres how i cook whole chickens on the grill.Take a beer can( a 16 oz can works better than a normal 12 oz can but they all work) and cut the top inch off with heavy duty scissors. Then fill the can 1/2 way up with beer(or another liqued if you dont wanna use beera),and to the beer add whichever spices/herbs you wish to add(i also mix some of the spices with some butter and do a rub underneath the skin of the chicken). Then simply place the chicken over top of the beer can by inserting into the back of the chicken so its standing up verticly. Then cook on low heat untill done.I usually use my smoker but have used the grill. Its called Drunkin chicken and ive done many variations. The beer evaporates and all the flavors of the herbs and spices work into the chicken from the inside out.it is so moist and delicios youll love it.

The marinade for spanish grilled chicken is called "Mojo", it comes in a bottle, has that citrus/spice flavor, you can get it anywhere that sells spanish provisions, soak the chicken in the mojo & drain & grill. Also, make sure you put celantro in your beans, makes all the diffrence in the world, just sweat some garlic & schallots in butter, add canned black beans & water, let simmer a long time, add salt & pepper & chopped fresh celentro, it should have some what of a broth to it, like a black bean soup almost. And use real saffron rice, or the south west with corn by vigero. Trust me this will be a good dinner.
