Homemade Chicago Style Deep Dish Pizza With Homemade crust.

This deeeep dish pizza is sure to knock your socks off.

Crust ingredients: (This makes two 9 inch pies)
1 teaspoon sugar
1 (.25 ounce) package active dry yeast
1 cup warm water (105 degrees to 115 degrees)
2 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1/4 teaspoon salt
1 tablespoon olive oil
Vegetable cooking spray
2 tablespoons yellow cornmeal

Crust instructions:
1  Combine first 3 ingredients in a small bowl, and let stand 5 minutes. Position knife blade in food processor bowl; add flour, 1/2 cup cornmeal, and salt, and pulse 2 times or until blended. With processor running, slowly add yeast mixture and oil through food chute, and process until dough forms a ball. Process 1 additional minute.

2  Turn dough out onto a lightly floured surface; knead lightly 4 or 5 times. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover dough, and let rise in a warm place (85 degrees), free from drafts, 45 minutes or until doubled in bulk.

3  Punch dough down; cover and let rest 5 minutes. Divide dough in half; roll each half into an 11-inch circle on a lightly floured surface. Coat 2 (9-inch) round cake pans with cooking spray, and sprinkle each with 1 tablespoon cornmeal. Place dough in prepared pans; press dough up sides of pans. Cover and let rise 20 minutes or until puffy. Top and bake according to recipe directions.

The dough before and after rising:




Once your dough is ready spread it into your pizza pie pan.  Knuckle it up the edges of the pan to create a nice sorta bread bowl for your ingredients.


The Sauce Ingredients:
1 (6 ounce) can tomato paste
1 1/2 cups water
1/3 cup extra virgin olive oil
2 cloves garlic, minced
salt to taste
ground black pepper to taste
1/2 tablespoon dried oregano
1/2 tablespoon dried basil
1/2 teaspoon dried rosemary, crushed

Sauce instructions:
Mix together the tomato paste, water, and olive oil. Mix well. Add garlic, salt and pepper to taste, oregano, basil, and rosemary. Mix well and let stand several hours to let flavors blend. No cooking necessary, just spread on dough.


Basic Meatza Ingredients:
Italian Sausage
Canadian Bacon
Pepperoni
Lots'O'Cheese

The Italian sausage was made into miniature meatballs and fried on the stove before putting into the pie:


Add some Canadian Bacon on top of that:


Now a few pepperonis:


A little more sauce...I hate dry pizza.  The wetter, the messier, the better  :smile:


And of course lots of cheese:



Cooking Instructions:
Place in a preheated oven at 475 degrees for 15 minutes, then reduce heat to 375 for an aditional 15-20 minutes.

This bad ass pizza is 2 inches thick!

Kickass!  I'll definitely be trying this one out someday soon :rocket:

Question though, I don't have a food processor - will hand kneeding suffice for the dough mixing?

Actually I prefer hand kneeding since thats what my mamma made me do on "make bread saturdays" when I was a little guy. I don't see why it wouldn't be alright.

Also food processors suck to clean....note to self: get rid of food processor hire geo to kneed dough.

Looks really fine. I have a few points to add. Add a bit of egg to the crust to decrease water absorption during baking and make it fluffier. Secondly, from watching Chicago pizza being made I can add that the first step with the dough is to press cheese into the bottom layer of the crust before anything else.

delicious...i make my own pizza dough as well, I don't use cornmeal though. What does it add to the dough?

If you want, add some oregano,and abit of sauce to the dough before kneading, it adds some extra flavour

hmm, well i think it might just make it more dense, more pizza like...my dough tends to fluff up abit, which is good...i like lots of dough
