 How do you like to spice up your noodle dishes? :)   2

Personally I like to crack an egg in or hard boil one, throw in some scallions, jalapeños, cilantro, fry up some spam with tonkatsu sauce and sriracha, throw in some toasted seaweed, maybe some spinach, mushrooms are always good when on hand. I like to garnish it with some more tonkatsu sauce and mayo. I normally don't use instant noodles I like to use udon or lo mein instead. So tell me what you like

Oh man Kimchi is the stuff. Fermented cabbage stuff with some kind of noodle, who the hell knows what in it but it is so good
I wanna make some.....
For stir fry or egg noodle dishes I like to use turmeric, ginger, a little cumin, and whatever hot pepper substance I have around with a little honey. I used to drown everything in sriracha but it don't do it for me anymore.
Like 30 seconds before you take it off the stove turn the heat up and splash with coconut aminos (my replacement for soy sauce) to give it a sweet crispyness
For Italian/Mediterranean noodles I experiment with different combinations of Oregano, thyme, marjoram, basil, sweet and hot pepper flakes, garlic, sage, rosemary, sometimes a little spinach tossed in towards the end. Butter, olive oil or coconut oil infused with the herbs makes a great Italian seasoning on its own.

That sounds awesome 5is. Ima Curry kinda guy or a dash or 2 of my own dried pepper blend.

My favourite spice to include in a stir fry or noodle soup has got to be Star Anise, it packs a lot of interesting flavour. It's cool looking as well. That and ginger, garlic, soy sauce and black pepper.

Look into shichimi togarashi. It is a spice blend including Red Pepper, Roasted Orange Peel, Black Sesame Seed, Yellow Sesame Seed, Japanese Pepper, Sea Weed, Ginger.

I like just Shoyu (soy sauce) and ground pepper melody  maybe some Nori if i have some on hand.

Love this stuff... always ask for it if I'm at an establishment that gives me a bowl of plain rice (or if I'm eating udon/ramen). 
Insofar as no0dz... sesame oil, garlic, ginger, soy, seasoned vinegar, chilis, furikake, various veggies and meats and of course, a spiced-soy marinated soft/medium boiled egg.

Agreed with Sriracha. It’s one of the three ‘Must always have in my home’ hot sauces, next to Tapatio and Tobasco.
Any Asian noodle dish is getting doused with it - most often this ends up being Pad Thai.
