Cooking Xmas dinner for inlaws I'm thinking of making this.........thoughts? Suggestions?

Soup to start - broccoli and bleu cheese.

Then main course I'm thinking roasted turkey. With some gravy. Maybe stuffing?

And steamed asparagus.

Was also thinking of cooking up some prawns maybe a chili garlic? Or butter garlic an parsley? Skewered with some veggies?

That sounds like a good rounded meal right?

Bought some stupid expensive and tasty chocolate truffles for dessert.

Thoughts suggestions?

Make this turkey. It's the best ever!

Ingredients
6 quarts tap water
1 pound kosher salt
1 cup molasses
2 cups honey
1 cup soy sauce
1 tablespoon dried red pepper flakes
1 tablespoon dried sage
Large bunch fresh thyme
2 heads garlic broken into individual cloves, unpeeled
5 pounds ice cubes
14 to 18-pound turkey, cleaned, innards removed
1 pound unsalted butter, softened
2 lemons, zested


Directions
Watch how to make this recipe.
In a medium pot, bring 3 quarts of the tap water to a boil over medium heat. Put the kosher salt in a large bowl and slowly (and carefully!) pour the boiling water over the salt. Stir to blend.

Add the molasses, honey, soy sauce, red pepper flakes, sage, thyme and garlic to the salt and water mixture. Stir to blend. Add the remaining 3 quarts of cool water. Add the ice to a cooler or bucket large enough to hold the brine and the turkey. Pour the brine over the ice and use a large whisk to blend all of the ingredients.

Submerge the turkey, breast side down, in the brine. Make sure the cavity of the bird fills with the liquid as you are submerging it. Cover the cooler and allow the bird to sit in the brine overnight or for about 12 hours.

Remove the bird from the brine and dry it thoroughly with thick (absorbent) kitchen towels. Take care to wipe inside the cavity as well. Discard the brine. Whisk together the butter and the lemon zest. Gently lift the skin covering 1 breast of the turkey and spread half of the butter right on the meat under the skin. Repeat with the other breast. The butter will add extra moisture and richness as the bird roasts.

Preheat the oven to 350 degrees F.

Arrange the turkey in a roasting pan fitted with a rack. Put on the lower rack of the oven and roast until the internal temperature of the turkey taken from the thickest part of the thigh reads 170 degrees F on an instant-read thermometer, about 3 1/2 hours. Remove the turkey from the oven to a cutting board or serving platter and tent with foil. Allow to rest for 15 minutes before carving and serving.

Cook your turkey with its breasts down in the dish for the first 80-90% then flip it over on its back.

We tried this for the first time on thanksgiving and the bird came out so fuckin juicy I would never make it any other way.

u also should do like a wild rice or some kinda starch and maybe anothe veg some ppl dont like asparagrass (i like it roasted n stuff over steamed but idfk:shrug:)

My family has never really stuffed our birds before. Instead of 'stuffing' we eat 'dressing'.

It's basically the same thing but in a dish with bits of bacon and stuff. I don't know where my parents got it from but I'm assuming it's a southern thing, or maybe some Czech take on the stuffing.

I only had stuffing once at an ex girlfriends thanksgiving and it was kinda dry...

The way my family does Xmas dinner is buffet style opposed to serving courses like a restaurant. We prep everything we can the day before.

Imo i think it'll be a pain to do courses, it'll take away from mingling w/ the fam because you'll be stuck in the kitchen for a while. But it all sounds delicious though op. We always do a brunch sorta thing and have food just about ready as everyone arrives. We do- Bacon, breakfast sausage, baked mostacholi, ham, biscuits and gravy, baked mac n cheese (super delicious), sometimes waffles, then there's always a shit load of sweets and whatever else others bring.

Sounds pretty gewd, you should throw in some bread rolls or some shit too though. Everyone likes bread. I also have some dank dessert recipes if you'd wanna make another dessert :thumbup:

Alright.  You are going to be very busy.  Make the soup the day before.  Assemble the dressing the day before and do not put it in the turkey.  Bake it in a separate pan.  Stuff the turkey with a bunch of lemons cut in half and some herbs that you like.  You're going to have to make the gravy while the turkey rests covered in foil.  Gravy requires constant stirring so forget the prawns.  The asparagus is a fine but it isn't really the season for it.  If you can get it go for it but green beans are a suitable substitution.  Saute with shallots and garlic and maybe some other shit.  While the turkey is cooking also roast some root vegetables.  Potatoes, parsnips, turnips, whatever you like.

I have made Thanksgiving for years.  Whatever you can do ahead, do it.  I don't know how much help you're gonna have but it will get pretty hectic at the end.

Then you can relax and let other people clean up.

I really like searing asparagus with butter and garlic. To which I'd go with a chili prawn serving.

And will for sure try cooking turkey breast down.

Will def be adding some bread rolls!

You definitely gotta have the stuffing and gravy.

I hate most seafood but the idea of pairing prawns with turkey is repulsive to me and not the most traditional christmas dinner. But if your family likes seafood, it'd prolly be great.

The problem with the prawns is in the logistics.  They need to be quickly cooked and served immediately.  Either there is gonna be a big gap between the prawns and the soup or he isn't gonna get any soup.  I have made soup for T-Day.  I didn't get to have any.

pops in law is the only vegetarian so the prawns are for him the turkey is for everyone else.

the plan is have the turkey roasting. Once its about 95% done serve the soup. After soup will bring out the turkey and have the fiance start cutting it while i get on the prawns. I think it will be ok and i have help!
