I don't like anything touching the edges of the PC and I like at least enough water to be level with the metal rack. It doesn't take long to heat, and I'd rather wait 10 extra minutes than worry about running dry. I start with about a quart, maybe another pint or so if I'm doing a 2 hour run. That's on an AA921, some people have bigger or smaller PCs with different water requirements.

If I turn the heat down after its to pressure it always has plenty of water in even after 2.5 hour pc runs.
Watch Munchausen's vids. He places the pasty plate upside down an has made it much easier for me to handle an work with a steady hand.
Plus I only do about 15 mins SAB at a time. Take a break toke for a bit then more SAB work for 15 min. Repeat.

I think I'm putting way too much water in my PC then. The manual says 3 quarts of water. When my jars are in there the water reaches about 1/4 to 1/3 of the way. Should I back off?

about an inch of water in the pc is fine

For glass jars it never really matter to me the water height as long as they are not sitting on the bottom of the pc.
Get the weight rocking an lower the temp. PC water will last for hours.

We'll just for the record, I'm doing a 2.5hr total heating time with my AA921 with a cup if water. Still much water left afterwards. I think more than 3/4 cup is left in there. I'll measure it next time around. It is interesting to note that my aa921 is the old skewl one that just vents off some steam when you hit more than 25psi

2 of 8 plates now have visible mycelium growing on it 
Puts my mind at ease because i went ahead and inoculated 8 quart jars with ms too because fuck it.
I'll post pics asap and this puts my mind at ease about my sterile technique and the spores being good.
Oh, some of the plates have moving liquid in them, I think I just used too much spore solution because I was nervous lol. Anything to worry about?

I'm not quite sure what you meant by ungraceful. Perhaps be more specific to my actions in the video, so that I can review my practices and make any changes, if necessary. I'm filming this weekend, so I can reshoot this if need be.
Here was my trick or treat plates - mostly started from spores, mostly from syringes - with the exception of ape and envy.

and here they are all germinated and transferred

so, while I guess ungraceful to some, I've had nothing but success with a really low rate of contamination.

What do you mean by that? Lid completely off? I usually hold the lid open a crack with lid/jar in one hand as opposed to completely off. But I feel like his movements are so slow and controlled that he's not kicking anything up.

Same, and yeah that's what I meant but he has good control going on in there so it's not a big deal anyway. One could argue the extra precision you get by having both hands available beats out the minimized exposure by only barely cracking the lid.

My apologies, I should have been more descriptive. Well, I'm assuming the work was being done in a SAB? It just seems like an aweful long time to have the plate exposed to the open air no? Despite the smooth movements to prevent air displacement? Again, I didn't mean any offense by that, maybe "graceful" was the wrong word to use. If you really don't have any trouble having media exposed that long in an SAB, maybe I've just been too cautious this whole time lol.
