What is it with the popularity of that show!? Personally, I don't watch it because of the incredibly lame jokes on there... though I will admit that he does point out some good techniques and tips - but damn, I wouldn't be able to watch that show more than once a week if that, it erks me -- and not many things do that so that's saying something
My buddy Kremlin said he was gonna send me a bootleg of some episode where he gives tips on sharpening knives. This was like three weeks ago though, and I ain't holding my breath

I used to watch "Mr. Wizard" everyday as a kid, i think my intrest in the show stems off from that. Plus I love to eat.

I really like his show. Unconventional ways of cooking that might actually turn out better than the traditional method. I like his outside the box thinking. Yes, I'll also agree that some of the jokes and the format of the show can be corny sometimes, but I still enjoy watching his show. Good Eats is my 2nd favorite show. Good Eats still has to bow down to A Cook's Tour.

Yeah, I have an autographed copy, not signed in person, but it has his autograph nonetheless. That book is just has so much more than food network's G ratings will ever show. Anthony Bourdain is a fucking badass.

That episode got me started in home brewing. I don't want to bash him, but its impossible to cover homebrewing in a 30 minute show. He attempted and failed. I think he made a good attempt, and its the only show I've ever seen about home brewing.

I'm going to attempt his method in a month or so...you can go on foodtv.com and get a transcript that gives more detail.

There were a few steps that he was off on. Your not suppose to dry hop after you take the wort off the stove. Also he never mentioned anything about pot specifics. Generally you don't want to use a aluminum pot because it imparts a metallic flavor into the beer. Another bad idea is using ice to cool down the wort.
http://www.howtobrew.com/ Its a book, an earlier edition, but its online and free.
This was posted on Alton Brown's website a while back, after the 1st time "Amber Waves" was first aired.
"Being True To One's Brew
When I set out to make a home brew show I knew I was taking a chance. Brewing is a serious craft and the folks that do it take that craft seriously. And, they don?t always agree with one another. In other words, it?s a very American activity. I?ve gotten some mighty passionate emails from home brewers since the airing of Amber Waves and I suppose that?s a good thing. At least you guys care enough to voice your opinions. That said, the show wasn?t designed for home brewers. It was designed to give non-home brewers a look behind what makes beer tick and maybe inspire them to give it a go. There?s no way to cover every valuable piece of brewing information in 21 minutes, so we had to pick and choose. We wanted to be thorough but not dense, scientific but not?well persnickety. There are so many ways to make beer it can make your head spin before you even take a sip. If we did our job, then a lot of Americans who have never stepped foot in a brew shop will do so and then it will be the job of the real experts to guide them.
That said, the beer made on the show really was good. As soon as I can find the time I?m going to run another batch. This time I?ll skip the ice and see if I can taste a difference.
Yours in suds, A"
