I plan on using sawdust, wheat bran, and gypsum to grow a couple jars of Enokitake. Is there a way I can prepare the substrate without a PC?

Yes, boil 8 hours to sterilize, inoculate under sterile conditions

So, if I boil the jars themselves with the substrate inside, would I want to keep the temperature around 165/170? Also, should the jars lid be sealed tight?

No, jars have to be as hot as boiling water, this is sterilization and not pasteurization. If you don't seal jars they will spoil

Sealed but with gas exchange so it doesn't explode the jar

That's what I was worried about. 1/2 inch hole w tyvek ought to work.

Feel free to correct me if I'm wrong but can't you omit the wheat bran and pasteurize the substrate? I don't have any experience with enoki though. Good luck and keep us updated!

I guess you're right there about exploders. I had not checked to make sure. I just figured tight seal with a jar with a fair amount of air in it could build up a lot of pressure but I guess canning jars can handle it or bleed out some of the pressure past the lid. I'm just used to canning with lids somewhat loose, letting cooling phase seal jars, and haven't done stove top sterilization so I hadn't looked into it there. Still seems like a sealed jar of sufficient size with a lot of air in it could build up a ton of pressure, I guess jars can take it. I occasionally reuse some larger retail jars (apple sauce and similar) that are a bit thinner than the usual suspects, those would worry me sealed and boiled enough to search the forums in detail before i tried it. Not sure if I'd need to worry there either.

I've seen jars of seed PC'd with a hole in the lid stuffed with poly. You just put a piece of foil over the lid. No pressure problem there. After all, there has to be some type of hole for gas exchange.

I do 1 1/4 inch polyfill stuffed hole or 1/4 hole with tyvek and felt layers on the outside on just about everything jarred.

My Tyvek and felt are both cheap off brands from the surplus fabric store, I could probably still get away with one or the other but I've got a ton of both

Ez felt is much more durable than tyvek. If you can find the heavy duty ez felt at a craft store that stuff works great.

I've seen the pressed felt that's stiff, but it was way more expensive to get from the hobby store than Tyvek+felt was to get from the fabric salvage place. Like square foot costing the same as both yards of the other two. Pressed felt looked like it would work. I've never found real ez felt though.

Steaming will suffice, I just did two hours for my gymnopilus jars forgetting about the bran I addded but never had any issues

Nice! I like the sound of 2hrs over 8! Also just found a 12qt. PC at bed bath beyond for $30. Probably sucks, but I'm sure it will do fine.
