First time cultivating mushrooms

Hello all,
I just built this setup and plan to use it to grow in bulk. I've have fruited nothing in the chamber as of yet, tomorrow I have a couple timers arriving in the mail and will transfer my inoculated substrate to the fruiting chamber. I have a couple questions that my research was unable to answer. For starters I'd like to know what people would recommend for how frequently I should mist / fan for this big of a chamber. I've found it takes about 5 minutes to bring the RH above 95, and optimal fanning time is about 2 minutes. The digital timers I'll use have 50 different on/off events that can be set every 24 hours, 1 event = ON or OFF. The thing I was hoping to get some clarity on is transferring the cakes to the fruiting chamber. I have these big tin cake pans to put them in and I was wondering if I should cover the bottoms with dry verm or something else before putting the cakes in. Here are pictures of the fruiting chamber and the jars.
The left jar is complete and the other two have a little ways to go.

Your jars look good! 
Place your cakes on a dish but no need for the verm, the mycelium will just start colonizing it from the bottom of the cake.
I've never tried a greenhouse setup, but some growers swear by them.
Make sure to mist the cakes so they glisten with tiny water droplets. This will promote constant evaporation from the surface, which is a major pinning trigger!

GH looks good. I haven't used one either (SGFC and a montub so far). One thing to keep in mind is that you don't want a constant 95% RH, you're going to need a fluctuation in humidity to allow evaporation off the cakes.
Foil, plates, jar lids anything like that should work to hold the cakes.

I actually prefer the greenhouse setup, partially because I have nowhere in the open to setup a tub, but I haven't fruited straight cakes in there. I crumble and case or spawn to bulk in mini-trays.
