I don't know abouth your first question but the second one u could use soem metal mesh that is bendablelike in the Growing Guide V3.2

dried mushrooms smell like shit. ecspecially desicant dried. they do get dark and nasty looking so i wouldent give it to much of a thought. have fun

I use the same setup as FrozenHappiness. Seems to work fine. No disgusting smell, no weird colours. They look just like, well, dried mushrooms. If the fruits are too big, I slice them in half the help them dry easier. I don't use a fan on them, but I'm sure it would speed things up quite a bit.
For something under your cakes, foil would work. I've used it and it was fine. Now I use a rack that sits above my perlite.
