differential thermostat with cooling fan parts and assembly

Where to begin. I am not willing to get into detail of what I will be using this setup for due to the community's narrow opinion about certain aspects of cultivation. Besides, I know what I need, I just need some guidance on how to get there.
Like the title says, I want to connect a differential thermostatic controller to a computer cooling fan. Basically I want a fan to turn on when a temperature differential limit is reached and then for the fan to turn off when when the differential drops below the limit.
So far this is what I've been able to peice together. Now keep in mind that I am a complete noob when it comes to electronics.

sweet…i think i know what its for…can't wait to see how it pairs with the camera dude!
im also pretty bad with electronics. i usually watch a million u tube videos, and see what they have in common.
ur basically just trying to set up a relay that interrupts the circuit to the fan based on thermostat, right? u might be able to hook up more than 1 fan to it, cause it looks like they only draw .13a
is the probe more accurate? or does the thermostat have no internal thermometer?

After going back over the specs on that temperature controller, it has become apparent that it's not what I need. It only uses 1temperature sensor. I need a differential temperature controller that uses 2 sensors that are linear active. I had found one on ebay but thought I found a cheaper one with the device I posted in the op. This is actually what I need.

What I want this setup to do is turn an exhaust fan on when a predetermined temperature differential between the tub and ambient room temperature is reached and for it to turn the exhaust fan off when the temperature differential falls below that same set point.

Why the need for an ambient differential? Don't you just want to maintain the box a certain temp? Or do you have drastically changing temps in your ambient where it would be unwise to ventilate under certain conditions. If that's the case then the your on the right track with the second controller and it comes with the sensors so you won't need the one listed in your first post.
Sounds like a fun project.
