    #2245452 - 01/16/04 04:23 AM (12 years, 10 months ago)

just Pc'd a case of jars for 20 min., 8 in larger pc and 4 in a smaller one, the smaller one runs at 5 psi i think and the bigger one 15, the 8 jars i put in the lareg pc turned yellow... is this good or bad? should i re-sterilize the other 4 clear ones? does it even matter?

-thanks

5 psi sucks -- I wouldn't even trust that for sterilization. The yellow ones are fine -- I would worry more about the possibility that the other ones aren't completely sterile -- 5 psi might not be enough. It's liquid, though, so it autoclaves pretty fast, so you might be o.k. with all of them; who knows?

Dextrose can turn yellow -- as long as you only PC'ed for maximum 20 mins. you should be fine.

If you PC a dextrose/water solution for too long, you will start to carmelize the dextrose. A little bit of carmelization doesn't seem to hurt anything, but too much time in the heat will ruin the dextrose. I have had trouble when I PC dextrose solutions with just foil covering the cap. Polyfil works much better, at least in my hands.
