You can break up the cakes by hand or use a clean cheese grater. you should check out damion5050's coir tek

You planning on spawning to trays or doing a monotub?

That coir tek will work for smaller trays you'll just need to cut down the ammount of coir you prep. You'll probably and a spawn ratio between 1:1 and 1:3

Most of the TC's on here seem to feel the cheese grater damages the mycellium less. They also say spawning to coir gives better results, and from what cronicr posted, that certainly seems to be the case.
It isn't harder to do, it isn't riskier.
Another option would be to case whole cakes. Again, I think coir would be the way to go rather than peat, since it's way easier to get it right, requires less suplies, and is more nutritious. http://www.fungifun.org/English/Casing This way, you aren't mixing all the cakes together, and you might be able to cut out a single contaminated cake. That guide is pretty old. No need to paint the tray, it's more just to illustrate the configuration you could use with coir.
I'd just spawn to coir in a tray though.

I spawned some popcorn casings and had double-overlay cause I didn't put enough hydrogen peroxide in my automated aquarium mister. I only got one mushroom so I cut off the head part where the seeds fall from and put it in a jar of LC and sprayed it all over a tin of PF cakes I made with gravel, cardboard, and bisquick in my microwave. I think it will be good cause B+ is so potent. Triggered yet? Only a square would say "a cube is a cube."
No, this does not look right...

i have a question about it, how come you use a clear tub to put your cake and CVG mix in without a top casing layer ? correct me if I'm wrong but isnt it necessary to have a top layer and a dark tub?

dark tubs are pretty out dated. we have since learned that light at all stages is beneficial.
a top layer of cvg is totally optional. so are casing layers. a casing layer for cubes mostly aids in retaining moisture.
