pc'd my millet now it looks burnt?

i soaked millet + rape + quinoa for like 24 hrs. i put a bunch in 2 half gallon jars, pc'd for 90 mins @ 15psi and it came out burnt? along with 2 quart jars with a millet + rye mix... any idea why this happened? also, all the millet is stuck together in a big clump. gotta dump this all out and try again =(

Did you get hulled millet? as in no hulls on it, if you did it will turn into like a solid mass. Also when you pc rye or WBS it does change color (turns darker) and its best to shake right when the pc pressure drops to zero, to avoid the clumping you speak of.

definitly not the darkening of the rye, and its not hulled. and it was clumped up right when i looked in the pc.

Did you try and shake it? did you rinse the grains REALLY well to get rid of some of the starches?

Sounds like your water content was inadequate and you didn't add any gypsum (since you made no mention of it). Helps on breaking up clumps.

unless it was black you prolly didn't actually burn it and it just needed a shake......I doubt rinsing had anything to do with it....since I don't(and neither does starter) rinse my millet

I get a little clumping. Just bash it around and get it to all break up. Also mine never lloks burnt, because.....

.... I say this all the time....90 mins is too long. Go for 75.

I agree.  90 minutes is overkill... I got much better results overall when cooking for 70.... :smile:

yes,90 min can be too long for millet but not for rye .

you only have to pressure cook grains for around 60 to 70 minutes
