Flipping cakes
    #22428280 - 10/24/15 05:12 PM (8 years, 3 months ago)

Hey guys,
So ive birthed some cakes using pf tek however all of the pins are growing from the bottom of the cake bar a couple, I heard not to flip it as this will cause aborts but is there a point where they become mature enough so as to not abort if I flip the cake around and if so when is it? any input is welcome

Pins are forming on the bottom of the cake because that's where the right conditions are being met (think about the microclimate that is formed between the lid/foil and the bottom of the cake).

To fix this, try misting more and fan the cakes afterwards to speed up the evaporation process (this is a major pinning trigger). You should definitely see pins in more areas of the cake :goodluck:

Don't let them get that big

Always pick your mushies right when the veil is starting to break away from the stem!

Then place them in your food dehydrator at the highest setting, and they'll be cracker dry in less than 12 hours :super:
