Found three more gorgeous bouquets of maitake on my foraging hike after work, just as the sun set. Saw a fourth, but left it to get a bit larger...and to give my wife and I time to cook and eat what I've already collected this year. Actually got tired of taking pix, so only 2 out of three are depicted here. Hope you all are having as good a fall foraging season as I am here in NY.
Sure hope I can work out a jerky recipe that I really like. Have batch #3 soaking in my own marinade concoction as I type this.

Yes, I feel very blessed by nature's bounty. I've been very careful to harvest the maitake responsibly, cutting them in such a way as to leave the sclerotia intact.
I hope everyone else is as fortunate as I this season.

I saw a couple of hens this year, but they already had been harvested from by other hunters.
I had wonderful success with chickens though.
Nice finds.

Found two HUGE blooms on one massive oak on my walk through the forest today. Unfortunately, they were long past prime, dry and leathery. I left them to do their thing. I marked the position of the tree on my GPS so I can return next year to that spot.

Make this jerky recipe. I've turned well over 30 pounds of maitake into jerky this year using it and it is delicious, I just substitute the hot sauce they use for the green Cholula sauce.

I used that exact recipe as suggested by foragingfungus. Too salty for my taste.
I made my own jerky recipe consisting of burgundy wine, sweet (all natural) apple cider, brown sugar and cinnamon. It was delicious, except I dehydrated it a bit too long and it was a bit too dry. But it WAS yummy!!!
