Id say its probably the simplest, because you can get away with preparing it with just boiling water in a bucket. Most any other substrate needs to be pasteurized properly, kept between 140F and 170F for 1 hour.
Coir I just add 1 brick, 2qt verm and a hand full of gypsum in a 5 gal bucket, add 3-4 qts boiling water (to field capacity) and cap.. then mix. Coir just needs heat treatment, can be pasteurized proper, sterilized or bucket tek.
Horse poo, cow poo, straw... these need to be pasteurized proper.
Pasturization is really easy but intimidating to some new c ultivators is all.
Substrate is preference lots of choices. Coir is a good place to start and then work up to more complex subs, though lots of thr pros like coir!

I like coir/verm. Pasteurisation is easy but it's an extra step which takes time and can be fucked up, ruining your grow.
Coir/verm can also be prepped in advance and makes a suitable casing layer.
The drawback can be the price. Horse poo is often free. I pay between $6 and $8 for three bricks of coir and paid $15 for a giant insulation bag of verm.

Yea coir can get pricey. I found a hydroponic store with 12$ bricks that equal out to maybe 8 normal bricks, and single bricks for 2-2.50
So its not too bad. I buy these giant bales of straw for 5 bux, so I stretch my coir out with pasturized straw, so each tub ends up costing around a dollar for substrate its not too bad. But when you can get Hpoo free and mix it with straw your sub is virtually free!
This hobby is pretty awesome materials wise I think
